Abstract

PURPOSE: The cell wall partition of hot-water extract obtained from a yeast belonging to Saccharomyces is combined with alcohol to cause precipitation and the precipitate is dissolved in water, frozen, remelted and the supernatant is treated with protease. Thus producing said high-molecular-weight polysaccharide having high antitumorigenic acitivity.
CONSTITUTION: The cells of the yeast mentioned above, e.g., Saccharomyces cerevisiae, are treated with hot water at 80W90°C to extract and remove the content in the cells, thus obtaining the cell wall partition. The cell wall partition is treated with an organic solvent, e.g., methanol, to extract and remove the lipid component and further treated with hot water at about 80W100°C. The hot-water extract is concentrated preferably under reduced pressure, then treated with an alcobol, e.g., ethanol, to cause precipitation. The precipitate is dissolved in water, frozen, then gradually remelted and the supernatant is, after concentration, treated with protease to hydrolyze undesired protein. The protease is removed by a usual method and the supernatant is treated with alcobol to precipitate title polysaccharide.
