Abstract

PURPOSE: To prepare laver for rice balls rollable into the balls in the same manner as in the past, without using the expensive natural one, by scattering finely cut edible leaves of land plants into water, and by drying a sheet formed on a screen.
CONSTITUTION: Leaves of beefsteak plants or cherrytrees are thoroughtly rinsed with water, and finely cut to 2mm squares. The cut leaves are then scattered into water at a suitable concentration, suspended, and formed into a sheet of uniform thickness, which is dried in the shade and peeled. The pieces of leaves may be formed into a sheet in the presence of a size, e.g. agar, or suitable seasoning, to give laver for various sweet or bitter rice balls.
