PURPOSE: A compound edible oil having improved flavor unique to olive oil in addition to the excellent flavor of corn oil, capable of suppressing the serum cholesterol value, comprising olive and corn oils.
CONSTITUTION: Olive and corn oils (A) and (C) are mixed at a weight ratio of (A) to(C) of 25:75W99:1 to give an edible oil. A with a very high oleic acid content has a disadvantage of increasing the serum cholesterol value in fear of arteriosclerosis and deteriorating the unique flavor stability. The mixture of A and C at a given ratio provides a remarkably reduced increase in blood cholesterol due to A, and exhibits the same effect as C alone without the linear relationship with the mixing ratio.
