Abstract
PURPOSE: To prepare a dressing oil having excellent taste and flavor, and useful as mayonnaise, marinade, etc., by mixing mustard-based essential oils and unrefined olive oil.
CONSTITUTION: One or more base oils selected from corn oil, rapeseed oil, cottonseed oil, and refined oilve oil are mixed with 0.01W0.2% of mustard-based essential oils prepared from seeds of natural mustard, and 0.5W10% of non-deodorized unrefined olive oil obtained from olive only by the mechanical and thermal treatments.
