Abstract
PURPOSE: To prepare a proteinaceous substance having desirable taste, by extracting seeds containing proteins and oils, such as soy beans, or its treated product, with a mixed solvent containing n-hexane, ethanol and water in specific ratios, thereby deactivating lipoxigenase without reducing the soluble nitrogen compound.
