PURPOSE:To remove methylguanidine (M) from a substance containing M, by using enzymes capable of splitting M, produced through culture of microorganisms belonging to the genus Alcaligenes. CONSTITUTION:Microorganisms, e.g. Alcaligenes N-81 (FERM-P No.4368) or N-243 (FERM-P No.4369), which belong to the genus Alcaligenes, and have the ability to produce enzymes (E) capable of splitting methylguanidine (M) into methylamine and urea, are cultured in a nutrient medium to form E, which are collected and added to split M contained in a substance.
