Abstract
PURPOSE: To obtain strawberries coated with chocolate eatable at a low cost even out of the harvesting season, having a fresh and improved flavor, by coating the frozen strawberries with chocolate to cut off the moisture evaporation and bacteria invasion.
CONSTITUTION: Strawverries, which are frozen at -15°C or below, are coated by pouring molten chocolate such as chocolate, milk chocolate, white chocolate, cacao butter, or cocoa, in combination with a sweetening agent, seasoning, emulsifier, organic acid, fat and oil, alcohol, preservative, perfume, fruit, or nut powder, thereon. The strawverries are preferably frozen at -15°C or below more preferably at -30W-50°C quickly, to retain the unique flavor.
