Abstract

PURPOSE: To prepare light colored sorbitan useful as a raw material of food additives (e.g. emulsifier), in a simple process, by dehydrating D-sorbitol under reduced pressure, using an H-type strongly acidic ion exchange fiber as a dehydrating agent, with heating and stirring at a specific temperature.
CONSTITUTION: An aqueous solution of D-sorbitol is concentrated to the anhydrous state, or anhydrous sorbitol is molten. An H-type strongly acidic ion exchange fiber pref. having a diameter of ≤200μ and an aspect ratio of 3W500, is added to the anhydrous sorbitol, and stirred at 100W150°C, pref. 110W140°C, under a reduced pressure of 5W100mmHg, for 1W10 hours to obtain a light colored solution of sorbitol. The solution can be used, as it is, as a raw material of a fatty acid ester which is a useful emulsifier of ice cream. Powdery sorbitan can be prepared from the solution.
