Abstract

PURPOSE: Soybeans that are steamed and seeded with Bacillus Natto are charged in laminated carton vessels and fermented, then rapidly cooled with liquid nitrogen, thus preventing bitter taste, bad smell, spots, etc., and permitting the storage for long periqds of time.
CONSTITUTION: Soybeans are washed with water, immersed in water, drained, and steamed at a pressure of 2kg/cm2 for 15W30 min. The steamed soybeans is seeded with Bacillus Natto and charged in carton vessels laminated with polyethylene, then fermented in a chamber at 40W42°C for 8W15 hr. Then, the fermented soybeans are precooled to 1W2°C and rapidly cooled with liquid nitrogen to form said frozen Natto.
