Abstract
PURPOSE: Peeled raw corns are put in pouches for retorting, sealed in vacuum, sterilized with hot water saturated with pressurized steam, then cooled to produce food storable for a long time without the deterioration of taste in spite of relatively high sugar content.
CONSTITUTION: Storage tank 12 is set above retort tank 10 and vacuum-sealed pouches containing processed food are placed in retorting tank 10. High-pressure steam is introduced from pipe 17 into storage tank 12 and hot water comes down through diaphragm 13 into tank 10 and pouches are pressurized and heated. The hot water in tank 10 is recovered by pump 15 into storage tank 12. Then, cool water is supplied by pump from tank 23 into retorting tank 10 to cool the pouches. The cooling water is expelled out of valve 27 and the processed food is taken out of gate 11. Thus, food storable for a long time wothout deterioration in quality at room temperture is produced.
