Abstract
PURPOSE: To obtain a seasoned meat block, having a delicate flavor, and readily storable and cookable, by permeating a primary seasoning mixture solution into a raw meat block, and by heating the block with a secondary seasoning solution to form a soft skin part and a mixed seasoned layer on the surface.
CONSTITUTION: (A) A primary seasoning solution of a given concentration is permeated into a raw meat block to give a seasoned raw meat block, which is then heated in (B) a secondary seasoning solution to form a heated skin part like a soft skin and a layer seasoned with the solutions (A) and (B) on the surface. A mixture solution comprising 10% common salt, 5% Flodex (trade name), 0.3% a phosphate and 3% sodium glutamate is used as (A); a mixture solution comprising 8% Flodex, 0.5% white pepper, 0.1% sodium glutamate, 0.3% red pepper, 3% caramel and spice, as (B).
