Abstract

PURPOSE: To obtain a pickling medium usable several times, capable of retaining original natural color and shape of materials, and giving pickles rich in flavor, having improved storage stability for a long time, by using anhydrous sodium chloride incorporated with erysorbic acid as a main constituent.
CONSTITUTION: A medium for pickling is prepared by incorporating 0.03W0.5wt% of erysorbic acid (A) with 5W10wt% of anhydrous sodium chloride (B) based on materials. For seasoning, 0.1W3% based on the materials of a seasoning, e.g. inosinic or glutamic acid, may be added. Preferably, Chinese cabbages are pickled in the medium for 24W48hr; Welsh onions and onions, for 48W96hr.
