Abstract

CONSTITUTION: A medium for pickling is prepared by incorporating 0.03W0.5wt% of erysorbic acid (A) with 5W10wt% of anhydrous sodium chloride (B) based on materials. For seasoning, 0.1W3% based on the materials of a seasoning, e.g. inosinic or glutamic acid, may be added.
