Abstract

PURPOSE: To preserve raw chestnut for a long time, keeping its freshness, and keeping from getting moldy, by contacting the whole surface of the shell of raw chestnuts with clear cold water containing specific amounts of dissolved oxygen and dissolved carbon dioxide gas.
CONSTITUTION: Water in a thermostatic bath 1 is circulated with a pump 10 through an inlet 8, a cooler 3, and a sterilizer 7, and maintained at -1W+5°C. Additional water is supplied through a supply pipe 11, and excessive water is overflowed from an outlet 9 to keep the water in the bath clear.
