Abstract

PURPOSE: To obtain cheese snacks capable of providing a slight feeling of fullness, having improved nutritive value, by making thin layers having a thickness not more than 20mm from cheese as a main raw material, followed by baking them as quickly as possible to form a porous structure.
CONSTITUTION: Cheese, e.g., Cheddar, Edam, Gouda cheese, etc. or a blended product thereof obtd. by mixing with not more than 30wt% of additives, e.g., a protein food, carbohydrate food, binder, leaven or a food obtained by coating the cheese with said additives, and formed to thin sheets having <20mm, preferably <10mm, thickness, is baked by using preferably an infrared and/or high-frequency heater as quickly as possible at 140W300°C, preferably at 150W250°C until its water content attains ≤10wt%, preferably ≤8wt%.
