Abstract

PURPOSE: Title flavor composition that is made by mixing amino acids mainly selected from glycine, alginine, glutamate salts, alanine and others, nucleic acids, inorganic salts, saccharides and extracts from crab shells, thus being suitably used as a flavor for "Kamaboko" paste or for soup.
CONSTITUTION: (a) More than 50% of amino acids containing more than 40% of blycine, more than 40% of alginine alutamate, and more than 10% of alanine, (b) more than 2% of 5'-uncleotide containing more 50% of sodium 5'-guanylate, (c) more than 30% of inorganic salts containing more than 20% of potassium ion, more than 40% of phosphate ion, sodium ion and chloride ion and (d) more than 1% of saccharide such as glucose or inverted sugar are mixed to prepare a flavor mixture.
