Abstract

PURPOSE: To obtain a salt substitute seasoning having a good flavor, by blending histidine hydrochloride or lysine hydrochloride with sodium inosinate, sodium quanylate, a sweetener, and sodium citrate.
CONSTITUTION: 10pts.wt. histidine hydrochloride or lysine hydrochloride or their mixture is blended with 3W7pts.wt. sodium inosinate, 5W20pts.wt. sodium quanylate, 0W200pts.wt. one or several sweeteners such as an amino acid type sweetener, e.g., glycine, etc. saccharide, e.g., sucrose, honey, stevia, licorice, extract, etc. as a sweetening component. and 0W7pts.wt. sodium citrate, to give a salt substitute seasoning. The sweetener and sodium citrate are added, if necessary.
