Abstract

The taste of foods, beverages or seasonings is enhanced by incorporating therein glycine and a 51-nucleotide. Compositions suitable for incorporating in foods and beverages comprise glycine and (1) sodium 51-inosinate, (2) sodium 51-guanylate, (3) sodium L-glutamate and sodium 51-guanylate, (4) salt and sodium 51-adenosine triphosphate, (5) salt, sodium L-glutamate, sodium L-aspartate and sodium 51-adenylate or (6) cane sugar, glucose, mannitol and sodium 51-inosinate.
