Abstract

PURPOSE: To impart Japanese "sake" with refreshing taste, by dissolving CO2 gas in the "sake" to a super-saturated state.

As an alternative method, drinking water super-saturated with CO2 is added to Japanese "sake" and if necessary CO2 gas is further added thereto. The CO2-containing "sake" is bottled in small bottles while preventing the dissipation of the CO2 gas. The heavy taste of the Japanese "sake" can be reduced and the drunken sickness is prevented by this process.
