Abstract
PURPOSE: To impart Japanese "sake" with refreshing taste, by dissolving CO2 gas in the "sake" to a super-saturated state.
CONSTITUTION: Japanese "sake" is poured into an air-tight vessel leaving the least possible empty space, and added with gaseous or liquid CO2 through a pipe having an opening under the liquid level of the Japanese "sake". The amount of the CO2 is pref. 0.6W1g per 100g of the "sake" to ensure the super-saturated state. As an alternative method, drinking water super-saturated with CO2 is added to Japanese "sake" and if necessary CO2 gas is further added thereto. The CO2-containing "sake" is bottled in small bottles while preventing the dissipation of the CO2 gas. The heavy taste of the Japanese "sake" can be reduced and the drunken sickness is prevented by this process.
