Abstract
PURPOSE: To prevent the discoloration and the deterioration of taste and flavor of soy sauce caused by oxidation, by filling the upper empty space of a container containing fresh or heat-treated soy with CO2 gas.
CONSTITUTION: Dry ice or liquid CO2 is put into an empty container such as glass bottle, tank, etc., and evaporated to replace the air in the container with CO2 gas. Fresh soy sauce or heat-treated soy sauce is charged into the CO2-containing container and sealed to obtain a container containing soy sauce and filled its upper space with CO2 gas.
