Abstract

CONSTITUTION: Raw fish or its fillets are dipped in a saline solution of a orescribed concentration for a predetermined time to promote the exudation of the liquid in the surface cells and shrink the cells with forming the protecting layer. Then, the treated raw fish or fillets are put into air-tight bags or vessels and the bags or vessels are filled with oxygen and carbon dioxide gases in a specific proportion.
