Abstract

PURPOSE: To penetrate the desired amount of effective substances into a food and to enable efficient penetration treatment by abrupt degassing action, by utilizing the degassing action caused by the pressure reduction treatment of an easily water-soluble gas which is dissolved forcedly in the interior of a food by pressure treatment.
CONSTITUTION: A solution containing effective substances, e.g., lactose, salt, glycine, etc. is prepared, and fed to a pressure container. A food to be penetrated is put in the pressure container without being soaked in the solution containing the substances, the container is hermetically sealed, an easily water- soluble gas, e.g., carbon doxide gas, etc. is injected into the container, and the easily water-soluble gas is made to be dissolved in the food while the pressured state is being maintained for a given time. The food is soaked in the solution containing the substances and the pressure in the container is reduced. Consequently, the easily water-soluble gas is degassed, exhausted and moved into the solution containing the effective substances, and the solution containing the effective substances is penetrated into the food substitutingly with the gas.
