Abstract
PURPOSE: To pentrate the desired amount of effective substances into a food in a short time, by dissolving an easily water-soluble gas in the interior of a food forcedly, followed by degassing the food instantaneously by a pressure reduction treatment.
CONSTITUTION: A solution containing effective substances, e.g., lactose, salt, glycine, etc. is fed to a pressure container, and a food to be penetrated is soaked in the solution. The pressure container is hermetically sealed, an easily water- soluble gas, e.g., carbon dioxide gas, etc. is injected to the solution, and the pressure in the container is raised to a given pressure. The pressure is maintained for a fixed time so that the easily water-soluble gas is made to be dissolved in the food. The easily water-soluble gas is exhausted out of the pressure container, the pressure in the container is reduced and returned to normal pressure. Consequently, the easily water-soluble gas dissolved in the food to be penetrated is continuously degassed, exhausted and moved to the solution containing the effective substances, and the solution containing the effective substances is penetrated into the food substitutingly with the gas.
