Abstract
PURPOSE: To prepare foamed refined "sake" having much tasting substances and a refreshing floavor, by dissolving gaseous carbon dioxide in refined ordinary or unrefined "sake" taken out of a gyle during the fermentation.
CONSTITUTION: Refined sake with an alcohol content ≥1vol%, preferably 17W 20vol%, or unrefined sake, taken out of a gyle during the fermentation, is incorporated with a saccharified grain liquid (S) with a 3W20 Baume' degree preferably 9W11, e.g. saccharified rice liquid, and further fermented. The formed gaseous carbon dioxide is dissolved in the fermentation liquid. In the case of the unrefined sake, S may not be incorporated.
