Claims (1)
- 【特許請求の範囲】 1. a) i)D.E.が約5〜約30である少なくとも約3%の加水分解し たデンプンを含む、少なくとも約3.2%の変性デンプンであって、存在する任 意の乾燥した変性デンプンが、変性デンプン1グラム当たり水約0.4〜約8グ ラムのWAIを有する変性デンプンと、 ii)デンプン1グラム当たり水約6.7〜約9.5グラムのWAIを有す る約96.8%以内のポテトフレークと、 iii)その他のデンプン含有成分のいずれかがポテトフレーク以外のデン プンを主成分とする材料中に存在する場合、前記その他のデンプン含有成分が、 ポテトフレークのWAI未満のWAIを有するデンプン含有成分と、 を含むデンプンを主成分とする材料約50%〜約70%と、 b)追加水分約30%〜約50%と、 を含むことを特徴とする生地組成物。 2.乳化剤約0.5%〜約6%をさらに含むことを特徴とする請求項1に記載の 生地組成物。 3.前記デンプンを主成分とする材料がポテトフレーク約25%〜約96.8% を含むことを特徴とする請求項1に記載の生地組成物。 4.前記フレークが、 (a)破砕細胞約40%〜約60%と、 (b)アミロース約16%〜約27%と、 (c)水分約5%〜約10%と、 (d)乳化剤を少なくとも約0.1%と、 を含むことを特徴とする請求項3に記載の生地組成物。 5.前記デンプンを主成分とする材料が、 (a)ポテトフレーク約40%〜約90%と、 (b)ポテト顆粒約5%〜約25%と、 (c)高アミロペクチン粉またはデンプン約2%〜約10%と、 (d)変性デンプン約0.2%〜約10%と、 (e)グルコース当量値が約5〜約30である加水分解したデンプン約3% 〜約15%と、 (f)乳化剤約0.1%〜約6%と、 を含むことを特徴とする請求項4に記載の生地組成物。 6.前記高アミロペクチン粉またはデンプンが、ロウ質トウモロコシ、ロウ質米 、甘味米、およびこれらの混合物からなる群から選択されることを特徴とする請 求項5に記載の生地組成物。 7.前記変性デンプンがアルファ化架橋デンプンであることを特徴とする請求項 6に記載の生地組成物。 8.請求項7に記載の生地組成物から形成される生地シート。 9.請求項8に記載の生地シートから製造される加工チップ。 10.前記チップが、非消化性脂肪と、非消化性脂肪およびトリグリセリド脂肪 の混合物とからなる群から選択された脂肪で揚げられることを特徴とする請求項 9に記載の加工チップ。 11.前記脂肪が非消化性脂肪であることを特徴とする請求項10に記載の加工 チップ。 12.(a)請求項7に記載の生地組成物から生地を形成する段階と、 (b)前記生地からシートを形成する段階と、 (c)前記シートからスナック片をカットする段階と、 (d)非消化性脂肪と、非消化性脂肪およびトリグリセリド脂肪の混合物とか らなる群から選択された脂肪でスナック片を揚げる段階と、 を含むことを特徴とするスナック製造方法。 13.前記生地が、厚さ約0.015インチ〜約0.10インチ(約0.038 〜約0.25cm)のシート状に形成されることを特徴とする請求項12に記載 の方法。 14.前記脂肪が非消化性脂肪であることを特徴とする請求項13に記載の方法 。
