Description
麦芽(原料中の麦芽比率52重量%)、液糖、ホップ及び多糖分解酵素を用いて常法により、発酵前液を得た。発酵前液にビール酵母を添加して発酵させ、発酵後液を得た。発酵後液を濾過し、実施例6のビールテイスト飲料を得た。次いで、実施例6のビールテイスト飲料を水で希釈して、比較例1及び実施例1~5のビールテイスト飲料を得た。
得られたビールテイスト飲料に対して、「熟成様の立ち香を伴った味わい」及び「後味の炭酸感」の評価項目について、官能評価を実施した。官能評価は、選抜された識別能力のあるパネル3名により実施した。各評価項目は、いずれも評点1~5の5段階で評価し、その平均値を評価スコアとした。結果を表1に示す。
麦芽、液糖、ホップ及び多糖分解酵素を用いて常法により、発酵前液を得た。なお、原料中の麦芽比率40重量%、65重量%又は100重量%となるように麦芽及び液糖の添加量を調整した。発酵前液にビール酵母を添加して発酵させ、発酵後液を得た。発酵後液を濾過し、実施例7及び比較例2~3のビールテイスト飲料を得た。
実施例7のビールテイスト飲料に乳酸を添加して、実施例8~11のビールテイスト飲料を得た。
実施例9のビールテイスト飲料にリナロールを添加して、実施例12~15のビールテイスト飲料を得た。
Claims (2)
- 原料中の麦芽比率が50重量%以上66重量%以下であり、
糖質含有量が0.50g/100mL以上1.40g/100mL以下であり、
アルコール度数が6.0v/v%以上10.0v/v%以下であり、
乳酸含有量が100mg/L以上400mg/L以下であり、
リナロール含有量が0.4μg/L以上50μg/L以下である、ビールテイスト発酵飲料。 - アルコール度数が9.5v/v%以下である、請求項1に記載のビールテイスト発酵飲料。
