Description
発泡酒(麦芽エキス、ホップ、糖類、カラメル色素、食物繊維、大豆たんぱく、調味料(アミノ酸))、及びスピリッツ(大麦)を原材料とするビール様発酵麦芽飲料(アサヒビール社製「アサヒオフ」(商品名))を市場より入手した。なお、このビール様アルコール飲料の糖質は、0.5g/100mL未満であり、アルコール度数は、3%(v/v)である。これを実施例1の対照区とした。対照区の飲料に食品添加物フェルラ酸(築野食品工業社製)を適量添加することで、ビール様発酵麦芽飲料のフェルラ酸濃度(ppm(w/v))を表2に示す量に調節した。フェルラ酸は10000ppm(w/v)となるようにエタノールに溶かしたものを添加した。
評価軸:1(弱い)-2(少し弱い)-3(対照と同等)-4(少し強い)-5(強い)
評価点が3.5点以上の場合にのどに対する抵抗感が上がったと評価した。
評価軸:1(悪い)-2(少し悪い)-3(対照と同等)-4(少し良い)-5(良い)
評価点が3.5点以上の場合にビールとしてのバランスがよくなったと評価した。
食物繊維、大豆ペプチド、ホップ、香料、酸味料、カラメル色素、アスコルビン酸、アセスルファムカリウムを含有する発酵させていないビール用清涼飲料を作成し、こちらに食品添加物フェルラ酸(築野食品工業社製)を添加することで、フェルラ酸濃度0.1ppm(対照区A)及び0.8ppm(試験区A)のビール様清涼飲料水を得た。
フェルラ酸はカルボキシル基およびフェノール性水酸基を有し、抗酸化剤として知られている。そこで、通常使用される抗酸化剤及び酸味料などを準備し、同様の効果が得られるかどうか試験した。比較する抗酸化剤及び酸味料は次の通りとした。
実施例1の対照区と同じビール様発酵麦芽飲料(糖質濃度0.5g/100ml未満、アルコール度数3%)を市場より入手した。上記ビール様発酵麦芽飲料に原料用アルコールを添加することで、ビール様発酵麦芽飲料のアルコール濃度を6%に調節し、DE11.8の澱粉分解物(松谷化学工業社製「パインデックス#2」(商品名))を添加することで、糖質濃度を表8に示す通りに調節した。なお、パインデックス#2は、各試料に添加する体積が同一になるように濃度を適宜調節した水溶液として添加した。これらを実施例4の対照飲料とした。

- フェルラ酸の量が濃度0.8~10ppm(w/v)であり、糖質の量が濃度2.0g/100ml以下であり、実質的にアルコールを含有しないビール様飲料であって、
フェルラ酸の量が濃度0.1ppm以下の前記ビール様飲料と比較した場合に、のどに対する抵抗感が増強されている、前記ビール様飲料。 - フェルラ酸の量が濃度0.8~3.2ppmである、請求項1に記載のビール様飲料。
- 糖質の量が0.5g/100ml未満である、請求項1又は2に記載のビール様飲料。
- 麦から得られた成分又は麦芽から得られた成分を含む、請求項1~3のいずれか一項に記載のビール様飲料。
- ビール様清涼飲料である、請求項1~4のいずれか一項に記載のビール様飲料。
- 非発酵ビール様飲料である、請求項1~5のいずれか一項に記載のビール様飲料。
- 糖質の量が濃度2.0g/100ml以下であり、フェルラ酸の量が濃度0.1ppm以下であり、実質的にアルコールを含有しないビール様飲料のフェルラ酸の量を濃度0.8~10ppm(w/v)に調節する工程を包含する、前記ビール様飲料ののどに対する抵抗感を増強する方法。
