Description
(i)被覆された粒子は、(被覆された粒子以外に)その用途に必要な成分(すなわち、砂糖、風味剤、他の栄養素等)を全て含む乾燥即席飲料配合物中において、肉眼で識別可能であるべきである;および
(ii)有色粒子は、即席粉末の成分全体と同じように可溶性を有するべきである、すなわち、有色粒子も同様に水分散性/水溶性を有するべきであり、さらに、即席粉末飲料の溶解性は有色の被覆された粒子によって悪影響を受けるべきではない;および
(iii)即席粉末の保存安定性および品質保持期間は被覆された粒子によって悪影響を受けるべきではない;および
(iv)飲用可能な状態になった飲料の色は有色の被覆された可溶性粒子によって影響を受けるべきではない;および
(v)飲料の安定性は被覆された粒子によって悪影響を受けるべきではない。
(a)芯物質及び
(b)コーティング層であって、β−カロテンをコーティング層の総重量を基準として0.1重量%(wt%)〜30wt%含む、コーティング層、
を有する赤橙色固体粒子(SP)であって、コーティング層を形成するために使用されるβ−カロテン配合物は、A1/1値が200までであることを特徴とする、固体粒子に関する。
β−カロテン(約220mg)を100ml容のメスフラスコ内に精秤し、50℃の蒸留水(50ml)を加えて超音波処理する。メスフラスコを低温の流水で冷却し、蒸留水でメスアップする。この懸濁液(10.00ml)を蒸留水でさらに100.00mlに希釈する。
分光光度計を用いて1cmのセルで蒸留水をブランクとして用いて492〜496nmの吸光度を測定(極大波長で測定)する。
次式:
(式中、Bはβ−カロテンの初期重量(単位:グラム)である)を用いてA1/1値を得る。
(a)芯物質を、赤色固体粒子の総重量を基準として、60〜99wt%、及び
(b)コーティング層を、赤色固体粒子の総重量を基準として、1〜40wt%、
からなり、コーティング層は、β−カロテンを、コーティング層の総重量を基準として0.1wt%〜30wt%含み、コーティング層のβ−カロテンのA1/1値は200までである。
(a)芯物質を、赤橙色固体粒子の総重量を基準として60〜99wt%、及び
(b)コーティング層を、赤橙色固体粒子の総重量を基準として1〜40wt%、
からなり、コーティング層は、β−カロテンを、コーティング層の総重量を基準として0.1wt%〜30wt%含み、コーティング層のβ−カロテンのA1/1値は200までである固体粒子(SP)、(SP1)または(SP1’)である、赤橙色固体粒子(SP2)にも関する。
(a)芯物質を、赤橙色固体粒子の総重量を基準として80〜99wt%、及び
(b)コーティング層を、赤橙色固体粒子の総重量を基準として1〜20wt%、
からなり、コーティング層は、β−カロテンを、コーティング層の総重量を基準として0.1wt%〜30wt%を含み、コーティング層のβ−カロテンのA1/1値は200までである固体粒子(SP)、(SP1)または(SP1’)である、赤橙色固体粒子(SP2’)にも関する。
(a)芯物質を、赤橙色固体粒子の総重量を基準として90〜99wt%、及び
(b)コーティング層を、赤橙色固体粒子の総重量を基準として1〜10wt%、
からなり、コーティング層は、β−カロテンを、コーティング層の総重量を基準として0.1wt%〜30wt%含み、コーティング層のβ−カロテンのA1/1値は200までである赤橙色固体粒子(SP)、(SP1)または(SP1’)である、固体粒子(SP2’”)にも関する。
(式中、Bはβ−カロテンの初期重量(単位:グラム)である)に従いA1/1値を算出することにより、β−カロテン配合物(コーティング層の形成に使用される)のA1/1値を決定することである、被覆された粒子(SP)、(SP1)、(SP1’)、(SP2)、(SP2’)、(SP2”)、(SP3)、(SP3’)、(SP3”)、(SP4)、(SP5)、(SP6)、(SP7)、(SP7’)、(SP8)または(SP8’)の製造プロセス(P)にも関する。
(a)飲用可能な状態にある還元後の飲料中で発色することなく(例えば、バニラ風味の飲料は白色淡黄色のままとなる)
(b)風味を伴う飲用可能な状態にある還元後の飲料の本来の色を乱すことはない(例えば、ライムは黄緑色のまま、ブドウおよびブラックカラントは赤紫色のまま、ブルーベリーは青味を帯びた色のままとなる)であろう。
β−カロテンを15%含有する、L−カルニチン(3.74g)、タウリン(0.17g)およびβ−カロテン(1.33g)の配合物(吸収極大波長の吸光度(1%、1cm)25)を水(50g)に溶解した。この溶液を、Wurster法を用いた実験室用流動層処理装置内で製造物温度を60℃として氷砂糖(200g)に噴霧した。噴霧終了後、生成物を60℃で乾燥させた。赤色の粉末状粒子(165g)を得た。
上述の粉末(1g)を市販の即席粉末飲料(99g)と混合する。混合物中の赤色粉末は赤色の点としてはっきりと視認される。混合物(60g)を水(250g)に溶解する。濁った溶液が得られる。赤色粒子を添加していない即席粉末飲料の溶液と比較しても色の変化は認められない。
Claims (6)
- 飲料用即席粉末において使用するための赤橙色乾燥固体粒子であって、
前記赤橙色乾燥固体粒子は、
(a)前記赤橙色乾燥固体粒子の総重量を基準として60〜99wt%の芯物質であって、糖、オリゴ糖および多糖からなる群から選択される少なくとも1種の化合物から形成されている芯物質と、
(b)前記赤橙色乾燥固体粒子の総重量を基準として1〜40wt%のコーティング層であって、β−カロテンを、前記コーティング層の総重量を基準として0.1wt%〜30wt%含む、コーティング層と、
からなり、
前記コーティング層の前記β−カロテンのA1/1値は200までであることを特徴とする、赤橙色乾燥固体粒子。 - 前記赤橙色乾燥固体粒子の粒子径は50〜1000μmである、請求項1に記載の赤橙色乾燥固体粒子。
- 前記赤橙色乾燥固体粒子の粒子径は100〜900μmである、請求項1に記載の赤橙色乾燥固体粒子。
- 飲料用即席粉末であって、
(a)糖、オリゴ糖および多糖からなる群から選択される少なくとも1種の化合物から形成されている芯物質と、
(b)コーティング層であって、β−カロテンを、前記コーティング層の総重量を基準として0.1wt%〜30wt%含むコーティング層と、
からなる赤橙色乾燥固体粒子を含み、
前記芯物質は、前記赤橙色乾燥固体粒子の総重量を基準として60〜99wt%であり、
前記コーティング層は、前記赤橙色乾燥固体粒子の総重量を基準として1〜40wt%であり、
前記飲料用即席粉末における前記コーティング層の前記β−カロテンのA1/1値は200までであることを特徴とする、飲料用即席粉末。 - 前記赤橙色乾燥固体粒子の粒子径は50〜1000μmである、請求項4に記載の飲料用即席粉末。
- 前記赤橙色乾燥固体粒子の粒子径は100〜900μmである、請求項4に記載の飲料用即席粉末。
