Description
下記表1のようにコーヒーミックスを製造した。
具体的に、比較例及び実施例のコーヒーは、インスタントコーヒー(マキシムモカゴールドオリジナル、東西食品)を用い、比較例1、2及び実施例1のコーヒーミックスに添加される甘味料は、タガトース(結晶タガトース、タガトース98.5%含有、CJ第一製糖)6g(実施例1)、及びこれと似た甘味度を示すように含量を調節して砂糖(白砂糖、CJ第一製糖)5g(比較例1)及びエリスリトール(Zibo Zhongshi Green Biotech Co.,Ltd)8.4g(比較例2)を用いた。前記エリスリトールは、血糖に栄養を与えない甘味成分(0Kcal、GI:0)であって、これを添加した比較例2をプラシーボ(placebo)に利用した。
1‐1.甘味料による血糖の変化
1)被実験者の選定及び摂取方式
前記製造例1の実施例1、比較例1及び比較例2を摂取した後の血糖の変化を測定するため、平均年齢32.4±5.5歳(25〜42歳)で、空腹血糖が100mg/dl以下の21名の健康な人(男12名、女9名)を対象に、下記のような実験を行った。
被実験者達の食後血糖の変化を測定するため、指先採血を介して食後0分、15分、30分、45分、60分、90分及び120分毎に血液のサンプルを採取した。毎回の採血時に電気化学的方法(Accu−Check、Roche)によって血液中のグルコースの含量を測定した。時間帯別の血糖面積(Area under the curve、AUC)の値は、Student’s paired t−testに基づいて統計処理された。統計的に有意的な値は、P<0.05を閾値に設定した。
1)被実験者の選定及び摂取方式
被実験者は、平均年齢32.4±5.5歳(25〜42歳)で、空腹血糖が 100mg/dl以下の22名の健康な人(男13名、女9名)を対象に、下記のような実験を行った。
被実験者達の血糖の変化及び血糖面積の変化の測定、そして統計処理は、実験例1‐1と同様に進めた。血糖の変化は、タガトース及びコーヒークリーマーが含有されたコーヒーミックス(実施例3)を摂取した場合が、砂糖及びコーヒークリーマーが含有されたコーヒーミックス(比較例3)を摂取した場合に比べ、15分(10.8%)、30分(12.7%)で有意的に血糖上昇が抑制され、90分間の血糖の変化(AUC)も5.49%で有意的に抑制された(図3及び4)。したがって、カフェイン含有コーヒー及びGIの高いコーヒークリーマーが含まれているタガトース含有コーヒーミックスを摂取する場合、6g/日以上摂取する時、既存の市販製品の類型である砂糖及びコーヒークリーマー含有コーヒーミックスに比べ、食後の血糖上昇を有意的に抑制することを確認できた。
前記実験例1と同一の被実験者達に、同一の方式で実施例2及び3を摂取させて、コーヒークリーマーの牛乳タンパク質の種類による血糖及び血糖面積の変化を確認した。実施例2のコーヒークリーマーにはカゼインが含まれており、実施例3のコーヒークリーマーには濃縮牛乳タンパクが含まれている。
Claims (8)
- コーヒー、コーヒークリーマー及びタガトースを含み、
前記コーヒーは、カフェインを含むものであり、
前記コーヒークリーマーは、牛乳タンパク質、水飴及び植物性乳脂を含むものであり、
前記牛乳タンパク質は、カゼイン(casein)、カゼインナトリウム、分離牛乳タンパク及び濃縮牛乳タンパクからなる群より選択されるものであり、
前記タガトースは、結晶形態であり、かつ、乾燥固形分の重量基準のタガトース含量が95%以上で含まれるものであり、
前記タガトースは、6g/日から10g/日の投与用量で含まれる血糖上昇抑制用の健康機能性食品。 - 前記血糖上昇の抑制は、前記健康機能性食品の摂取後30分から45分の血糖の数値が、前記健康機能性食品を摂取していない対照群の血糖の数値に比べて3%から20%減である、請求項1に記載の健康機能性食品。
- 前記血糖上昇の抑制は、前記健康機能性食品の摂取後0分から120分の血糖反応曲線下面積(AUC)が、前記健康機能性食品を摂取していない対照群の血糖反応曲線下面積に比べて2%から10%減である、請求項1に記載の健康機能性食品。
- 前記血糖上昇の抑制は、前記健康機能性食品の摂取後30分の血糖の数値が、前記健康機能性食品内のタガトースを砂糖に代替して摂取した対照群の血糖の数値に比べて3%から20%減である、請求項1に記載の健康機能性食品。
- 前記血糖上昇の抑制は、前記健康機能性食品の摂取後15分から30分の血糖の数値が、前記健康機能性食品内のタガトースを砂糖に代替して摂取した対照群の血糖の数値に比べて3%から20%減である、請求項1に記載の健康機能性食品。
- 前記血糖上昇の抑制は、前記健康機能性食品の摂取後0分から90分の血糖反応曲線下面積が、前記健康機能性食品を摂取していない対照群の血糖反応曲線下面積に比べて2%から10%減である、請求項1に記載の健康機能性食品。
- 前記食品は、コーヒーミックスである、請求項1に記載の健康機能性食品。
- 前記コーヒークリーマーは、(i)水飴、植物性硬化油脂、天然カゼイン、第2リン酸カリウム及び乳化剤を含むか、あるいは、(ii)水飴、植物性硬化油脂、無脂肪牛乳、第2リン酸カリウム及び濃縮牛乳タンパク粉末を含むものである、請求項1に記載の健康機能性食品。
