Description
本実施形態の塩味増強剤は、塩基性アミノ酸と、塩基性アミノ酸塩酸塩と、酸性物質を所定濃度で含有している。この塩味増強剤は、食品(特に、飲食物)に添加して使用することで塩味を増強させることができ、食塩の使用量を低減することができる。
0.05%未満だと塩味増強効果が感じづらい。0.5%より多いと強い異味が生じる。
0.3%未満だと塩基性アミノ酸塩酸塩添加による塩味増強効果が感じづらい。1.5%より多いと強い異味が生じる。
また調理後(喫食直前)の食品に添加する方法も挙げられる。この場合、塩味増強剤を構成する各成分は別々に包装されていても良い。喫食段階において、各成分が一緒になれば良い。したがって、成分ごとに形態が粉末であったり液体であったりしても良い。
塩味増強剤の塩味増強効果を確認する実験は、以下のように行った。なお、特に記載がない限り、濃度の「%」は最終濃度である。
(2)得られた各試験区のNaCl溶液を5人の熟練パネラーで評価した。評価は塩味増強効果及び異味について行った。評価は下記評価に基づき行った。塩味増強効果についての評価は0.5%、0.6%、0.65%NaCl溶液を基準として評価した。
(3)得られた評価を平均し、各試験区における評価とした。
なお、同一内容の試験区には同一の番号を振った。
0点:0.5%NaClと同程度の塩味
1点:0.5%NaClよりも塩味が強く0.6%NaClよりも塩味が弱い
2点:0.6%NaClと同程度の塩味
3点:0.6%NaClよりも塩味が強く0.65%NaClよりも塩味が弱い
4点:0.65%NaClと同程度の塩味
5点:0.65%NaClよりも塩味が強い
0点:異味を感じない
1点:わずかに異味を感じる

Claims (3)
- 塩基性アミノ酸と、塩基性アミノ酸塩酸塩と、酸性物質とを含む塩味増強剤であって、
塩味増強剤自体のpHがpH6.0〜8.0となるように喫食時の食品への各成分の最終添加濃度が、
塩基性アミノ酸が0.05〜0.5%であり、
塩基性アミノ酸塩酸塩が0.3〜1.3%であり、
酸性物質が0.01〜0.50%であり、
前記塩基性アミノ酸がアルギニンであり、
前記塩基性アミノ酸塩酸塩が、リジン塩酸塩またはオルニチン塩酸塩の少なくともいずれかである、塩味増強剤。 - pH3〜8の食品の塩味を増強するための塩味増強剤であり、
塩味増強剤の成分が、塩基性アミノ酸と、塩基性アミノ酸塩酸塩と、酸性物質とを含む塩味増強剤であって、
塩味増強剤自体のpHがpH6.0〜8.0となるように喫食時の食品への各成分の最終添加濃度が、
