一般に、クランチ粒子を有するチューインガム組成物、すなわち「クランチ粒子チューインガム組成物」は、複数のクランチ粒子、ガムベース又はガムベースポリマー、及びバルク甘味料を含み、クランチ粒子を含まないチューインガム組成物、すなわち「非クランチ粒子チューインガム組成物」は、ガムベース又はガムベースポリマー、バルク甘味料、及び任意選択の複数の着色粒子を含み、非クランチ粒子チューインガム組成物は、本明細書に記載の通り、クランチ粒子を含まない。非クランチ粒子チューインガム組成物が、着色粒子を含む場合、本明細書では、「着色粒子チューインガム組成物」と称してもよい。
水溶性甘味料、例えば、ジヒドロカルコン、モネリン、ステビオシド、レバウジオシド、グリチルリジン、ジヒドロフラベノール、モナチン、及びL−アミノジカルボン酸アミノアルケン酸エステルアミド、例えば、米国特許第4,619,834号中に開示されるもの、又はこれらの組み合わせ;

ステビオシド及びステビア由来の化合物等の、天然水溶性甘味料に由来する水溶性甘味料、例えば、レバウジオシドA等を含めたレバウジオシド等のステビオールグリコシド、イソモグロシドV等の羅漢果(lo han quo)及び羅漢果由来の化合物、普通の砂糖(ショ糖)の塩素化誘導体、例えば、クロロデオキシスクロース又はクロロデオキシガラクトスクロースの誘導体等のクロロデオキシ糖誘導体(例えばスクラロースの製品商標下で知られる);例えば、1−クロロ−1’−デオキシスクロース;4−クロロ−4−デオキシ−α−D−ガラクトピラノシル−α−D−フルクトフラノシド、又は4−クロロ−4−デオキシガラクトスクロース;4−クロロ−4−デオキシ−α−D−ガラクトピラノシル−1−クロロ−1−デオキシ−β−D−フルクト−フラノシド、又は4,1’−ジクロロ−4,1’−ジデオキシガラクトスクロース;1’,6’−ジクロロ−1’,6’−ジデオキシスクロース;4−クロロ−4−デオキシ−α−D−ガラクトピラノシル−1,6−ジクロロ−1,6−ジデオキシ−β−D−フルクトフラノシド、又は4,1’,6’−トリクロロ−4,1’,6’−トリデオキシガラクトスクロース;4,6−ジクロロ−4,6−ジデオキシ−α−D−ガラクトピラノシル−6−クロロ−6−デオキシ−β−D−フルクトフラノシド、又は4,6,6’−トリクロロ−4,6,6’−トリデオキシガラクトスクロース;6,1’,6’−トリクロロ−6,1’,6’−トリデオキシスクロース;4,6−ジクロロ−4,6−ジデオキシ−α−D−ガラクト−ピラノシル−1,6−ジクロロ−1,6−ジデオキシ−β−D−フルクトフラノシド、又は4,6,1’,6’−テトラクロロ4,6,1’,6’−テトラデオキシガラクトスクロース;4,6,1’,6’−テトラデオキシ−スクロース、又はこれらの組み合わせを含むクロロデオキシスクロース及びクロロデオキシガラクトスクロース誘導体の例;
タウマオコッカス・ダニエリ(thaumaoccous danielli)、タリン、又はこれらの組み合わせ等のタンパク質系甘味料;並びに
アミノ酸系甘味料が挙げられる。
Aは、式−CO−Dの部分であり、Dは、以下の部分:(i)−NR1R2(式中、R1及びR2は、独立に、H並びにC1〜C8直鎖又は分枝鎖脂肪族、アルコキシアルキル、ヒドロキシアルキル、芳香脂肪族及びシクロアルキル基から選択されるか、又はR1及びR2は、これらに結合している窒素原子と共に、任意選択により置換された、5又は6員環の複素環の一部を形成する)と;(ii)−NHCH2COOCH2CH3、−NHCH2CONH2、−NHCH2CH2OCH3、−NHCH2CH2OH、−NHCH2CH(OH)CH2OHと、(iii)

複数のテクスチャーのチューインガム製品は、従来のチューインガムと比べて異なるテクスチャー及び食感を呈する。違いを特徴付けるために、様々な分析試験が開発され、最初に噛んだときと、最初に噛んでから噛み砕くまでの、複数のテクスチャーのチューインガム製品と従来のチューインガムとの間の違いを特徴付けた。
二重層の複数のテクスチャーのチューインガム製品を調製するが、第1の層の着色(非白色)チューインガムは、粒径がふるい分け分析に基づいて0.8mmより少なくとも90%大きく、10%>1.25mm以下を範囲とするイソマルトクランチ粒子を含有し;第2の層白色チューインガムは、任意選択の着色粒子を含有する。着色チューインガム及び白色チューインガムは、約1:1の重量比である。各チューインガム組成物の成分を表1に列挙する。
実施例1のチューインガムを、試料の初期テクスチャーを、表2に記載の4種の比較例チューインガムと比べて定性的かつ定量的に区別できる方法によって、初期クランチについて分析した。
試料の初期クランチは、1ミリメートル/秒のプローブ速度及び95%のプローブ貫入(95%の試料が、加えた力の方向にプローブで貫入される)で2ミリメートル(mm)のプローブ(シリンダー、長さ25mm)を備えたテクスチャー分析装置(Stable Micro Systems製のTA.XT.Plus Texture Analyser)を使用して測定した。イソマルトクランチ粒子を含有する層が最初にプローブで貫入されるように試料を配向させた。試料を分析し、試料の力の抵抗を、時間及び/又は貫入の関数として記録する。結果を、応力対プローブ貫入(%)曲線中に記録する。試料の種類毎に8回行なった。
Claims (10)
- 少なくとも2つの異なるチューインガム組成物層を含む複数のテクスチャーのチューインガム製品であって、
前記少なくとも2つの異なるチューインガム組成物層において、第1のチューインガム組成物層が、第2のチューインガム組成物層と連続的に接触しており、
少なくとも1つのチューインガム組成物層が、前記チューインガム組成物全体にわたって分布する複数のクランチ粒子を含み、
前記複数のテクスチャーのチューインガム製品が、コーティングされておらず、
ここで、
i.前記複数のテクスチャーのチューインガム製品が、応力対プローブ貫入(%)の曲線中の少なくとも2つの正の傾き及び少なくとも1つの負の傾きと、が、少なくとも50万パスカル、少なくとも75万パスカル、又は少なくとも100万パスカルの応力範囲をカバーする少なくとも1つの負の傾きとがあるという、テクスチャーアナライザー試験によって決定される初期クランチ特性を有し、前記テクスチャーアナライザー試験が、応力対プローブ貫入(%)としての結果を与えるか、又は

iv.これらの組み合わせであり、
ここで、前記テクスチャーアナライザー試験が、1ミリメートル/秒のプローブ速度で2ミリメートル(mm)のプローブを備えたテクスチャー分析装置を用いて実施され、前記プローブの貫入が、加えた力の方向である、

- 各チューインガム組成物層が、複数のクランチ粒子を含む、請求項1又は2に記載の複数のテクスチャーのチューインガム製品。
- 前記複数のテクスチャーのチューインガム製品が、2つのチューインガム組成物層を含み、第1のチューインガム組成物層が、複数のクランチ粒子を含み、第2のチューインガム組成物層が、前記第2のチューインガム組成物層全体にわたって分布する、複数の着色粒子、複数のクランチ粒子、又は両方を含む、請求項1又は2に記載の複数のテクスチャーのチューインガム製品。

- 各チューインガム組成物層が、ガムベース、バルク甘味料、及び、任意選択により、追加成分を含み、前記追加成分が、風味剤、高甘味度甘味料、食用酸若しくはその塩、感覚惹起剤、風味調節剤若しくは増強剤、着色料、保湿剤、塩、軟化剤、又はこれらの組み合わせである、請求項1〜7のいずれか一項に記載の複数のテクスチャーのチューインガム製品。
