Description
本明細書では、海産物ペプチドを含むエマルションが提供される。
飼料、食品、医薬品又は発酵産業における用途のための成分又は2次製造成分を製造するための海産物原料の使用が増加している。十分に活用されていない海産物原料は、食品や飼料への応用の可能性の高い機能性を備えた様々な洗練された製品を作るための新たな機会を提供している。このような原料の例は、魚、様々な甲殻類の種及び海産物無脊椎動物(evertebrate)種からの副産物である。このような原料は、特に、種々の形態のペプチド、タンパク質及びリン脂質の製造に有用である。
酵素及び加水分解に基づく代替方法に取り組むことで、乳化剤を添加する必要なく、魚、魚の一部及び甲殻類から作られたエマルションの形の安定な流体生成物を提供することが可能であることが発見された。
i.生物学的海産物材料と水とを混合して水と生物学的海産物材料との混合物を形成すること;及び
ii.触媒の存在下でペプチドとトリグリセリドとの混合物を加水分解すること;
iii.混合物を、触媒を不活性化するのに十分な温度まで加熱すること
を含み、その際、追加の乳化剤の実質的な不在下で実施する、前記方法が提供される。

Claims (1)
- トリグリセリド及び海産物タンパク質加水分解物を含むエマルションの製造方法であって、
a)生物学的海産物材料と水とを混合して、水と生物学的海産物材料との混合物を形成すること;
b)触媒の存在下で前記混合物を加水分解すること;及び
c)触媒を不活性化するために、工程b)において加水分解された混合物を少なくとも45分間、85℃を超える温度に加熱すること
を含み、ここで、エマルションの総重量の1重量%未満の乳化剤で実施する、前記方法。
