背景技术
海洋原材料用于生产在饲料、食品、药品或发酵工业中应用的配料或半加工(sub-manufactured)配料的利用在不断增加。未充分利用的海洋原材料代表了用于制造在食品和饲料中具有高应用潜力功能性的各种精制产品的新机遇。此种原材料的例子是来自鱼类、不同品种的甲壳类动物和海洋无脊椎动物(evertebrate)物种的副产品。此种原材料特别有用于制造不同形式的肽、蛋白质和磷脂。
通过水解鱼原材料和甲壳类动物(如磷虾和小虾)的加工已经进行了数年;但是,使得此种高脂肪产品在流体形式下也稳定是困难的,因为脂肪部分在贮存时在短时间内与水溶性部分分离,产生异质的三相产品:上部的甘油三酸酯通过各种形式的脂质/肽/蛋白聚集体的厚扩散层与水相分隔开。
发明内容
致力于以酶和水解为基础的替代方法,发现能够提供一种由鱼类、鱼的部分和甲壳类动物制成的乳液形式的稳定流体产品,而无需添加乳化剂。
本文提供的是一种制备包含甘油三酸酯和海洋肽的乳液的方法,包含:
i.将海洋生物材料与水混合以形成水与海洋生物材料的混合物;和
ii.在催化剂的存在下将肽与甘油三酸酯的混合物水解;
iii.将所述混合物加热到足以使所述催化剂失活的温度;
其中,该方法在基本不存在添加的乳化剂的条件下进行。
在进一步的实施方式中,以至多达肽甘油三酸酯混合物总重量约50重量%的量提供甘油三酸酯。
在一个实施方式中,所述催化剂从由酶、肽酶和蛋白酶组成的组中选择。在特定的实施方式中,所述催化剂从由复合蛋白酶(Protamex)、清酒曲酶(Kojizyme)、碱性蛋白酶(Alcalase)、风味蛋白酶(Flavorzyme)、中性蛋白酶(Neutrase)和木瓜蛋白酶组成的组中选择。

可以使去壳或不含骨骼的培育物的温度达到最低80℃并且在该温度下保持至少5分钟,更特别地10分钟以使在该方法中使用的酶失活。所述失活的培育物可以原样使用或通过脱水过程以制备流体形式的浓缩物,其分别具有以N(氮)x 6.25计并根据Bligh&Dyer为相同的蛋白质和脂肪的相对组成。

b)在催化剂的存在下将肽与甘油三酸酯的混合物水解;
c)将所述混合物加热到足以使所述催化剂失活的温度;
其中,该方法在基本不存在添加的乳化剂的条件下进行。
