作業手順
(1)青じそ、赤じそ(各100g)を丁寧に洗い、水が垂れなくなるまできちっときった。
上記実施例において、有機酸として、クエン酸に代えて酒石酸を用いた。また果糖として、ビートから製造された果糖を用いた。
青じそおよび赤じそとして、路地栽培のしそを用いるとともに、有機酸として、クエン酸に代えてリンゴ酸を用いて、実施例1の手順でしそジュースを調製した。
有機酸として、クエン酸に代えてビタミンC(アスコルビン酸)を用いた。また果糖として、ビートから製造したものを用いて調製した。
青じそおよび赤じそとして、ハウス栽培のものを用い、ビートから成る果糖によって調味して、しそ飲料を調製した。
Claims (10)
- 青じそと赤じそのしそ成分が有機酸と二酸化ケイ素のナトリウム塩から成る水溶性ケイ素と調味用果糖の水溶液中に溶解されて成る透明なしそ飲料。
- 青じそと赤じそとが等量用いられる請求項1に記載のしそ飲料。
- 青じそが無農薬の路地栽培のしそである請求項1に記載のしそ飲料。
- 赤じそが無農薬の路地栽培のしそである請求項1に記載のしそ飲料。
- 有機酸が、クエン酸、酒石酸、リンゴ酸、アスコルビン酸の1種または2種以上の混合物である請求項1に記載のしそ飲料。
- 果糖が、砂糖大根またはビートから得られたものである請求項1に記載のしそ飲料。
- 青じそと赤じそとを有機酸と二酸化ケイ素のナトリウム塩から成る水溶性ケイ素の水溶液中に一緒に浸漬し、常温で浸透によって青じそのしそ成分と赤じそのしそ成分とを前記水溶液中に浸出させ、果糖で調味した透明なしそ飲料の製造方法。
- 有機酸が、クエン酸、酒石酸、リンゴ酸、アスコルビン酸の内の1種または2種以上の混合物である請求項7に記載のしそ飲料の製造方法。
- 青じそと赤じそとを、常温の前記水溶液中に3〜10時間浸漬してしそ成分を抽出する請求項7に記載のしそ飲料の製造方法。
- 青じそと赤じそとを合わせた重量に対して0.02〜0.3重量%の水溶性ケイ素を添加する請求項7に記載のしそ飲料の製造方法。
