Description
本発明者等は、動物の脂肪、特に食用に適しない動物脂肪がアミノ酸、糖質、ビタミン、植物油およびフレーバー剤を含む薬剤の水溶液と共に高圧で加熱されると、脂肪のフレーバー特性が変化して好ましくない臭いが軽減することを見出した。高圧での加熱の後、水相を除去すると、ペット所有者にとってより望ましい、肉のような(meaty)、甘く、ローストまたはスモークされたような芳香特性を有する動物脂肪を提供することができる。さらにまた、本発明者等は、本発明によって処理される動物脂肪が予想外に食品組成物の嗜好性を増すことも、予想外にわかった。
a)水溶液中で動物脂肪原料と、アミノ酸、糖質、ビタミン、植物油、フレーバー剤およびフレーバー前駆体から選択される1以上の薬剤と、を組み合わせて混合物を形成する工程、
b)該混合物を110kPa〜800kPaの圧力で加熱する工程、
c)該混合物から嗜好性促進剤を得る工程、を包含し、該嗜好性促進剤が動物脂肪を少なくとも80重量%の量で含有することを特徴とする嗜好性促進剤を調製する方法を提供する。
a)水溶液中で動物脂肪原料と、アミノ酸、糖質、ビタミン、植物油、フレーバー剤およびフレーバー前駆体から選択される1以上の薬剤と、を組み合わせて混合物を形成する工程、
b)該混合物を110kPa〜800kPaの圧力で加熱する工程、
c)該混合物から画分を単離し、その画分が少なくとも80重量%の量で動物脂肪を含有する工程、
d)動物脂肪を含有する画分を食品組成物に導入して食品組成物の嗜好性を向上する工程、を包含する食品組成物の嗜好性を向上する方法を提供する。必要に応じて、画分は動物脂肪を少なくとも90重量%の量で含有する。また更に必要に応じて、画分は動物脂肪から本質的に成る。
80重量%〜90重量%の動物脂肪、
1重量%〜7重量%の水、
0.5重量%〜3重量%の植物油、
0.1重量%〜3重量%のアミノ酸、
0.5重量%〜3重量%の糖質、
0.1重量%〜4重量%のフレーバー剤、
0.01重量%〜0.5重量%のビタミン、および
0.01重量%〜0.5重量%の酸化防止剤。
85重量%〜88重量%の動物脂肪、
4重量%〜6重量%の水、
1重量%〜2.5重量%の植物油、
0.5重量%〜2重量%のアミノ酸、
1重量%〜2.5重量%の糖質、
0.1重量%〜2重量%のフレーバー剤、
0.1重量%〜0.3重量%のビタミン、および
0.1重量%〜0.3重量%の酸化防止剤を含有する。
a)水溶液中で動物脂肪原料と、アミノ酸、糖質、ビタミン、植物油およびフレーバー剤から選択される1以上の薬剤と、を組み合わせて混合物を形成する工程、
b)該混合物を110kPa〜800kPaの圧力で加熱する工程、
c)該混合物から臭気減少画分を得る工程、を包含し、該画分が動物脂肪を少なくとも80重量%の量で含有することを特徴とする動物脂肪の臭いを減少する方法を提供する。
[発明の詳細な説明]
a)水溶液中で動物脂肪原料と、アミノ酸、糖質、ビタミン、植物油、フレーバー剤およびフレーバー前駆体から選択される1以上の薬剤と、を組み合わせて混合物を形成する工程、
b)該混合物を110kPa〜800kPaの圧力で加熱する工程、
c)該混合物から嗜好性促進剤を得る工程、を包含し、該嗜好性促進剤が動物脂肪を少なくとも80重量%の量で含有することを特徴とする嗜好性促進剤を調製する方法を提供する。
a)水溶液中で動物脂肪原料と、アミノ酸、糖質、ビタミン、植物油、フレーバー剤およびフレーバー前駆体から選択される1以上の薬剤と、を組み合わせて混合物を形成する工程、
b)該混合物を110kPa〜800kPaの圧力で加熱する工程、
c)該混合物から画分を単離し、その画分が少なくとも80重量%の量で動物脂肪を含有する工程、
d)動物脂肪を含有する画分を食品組成物に導入して食品組成物の嗜好性を向上する工程、を包含する食品組成物の嗜好性を向上する方法を提供する。
a)水溶液中で動物脂肪原料と、アミノ酸、糖質、ビタミン、植物油、フレーバー剤およびフレーバー前駆体から選択される1以上の薬剤と、を組み合わせて混合物を形成する工程、
b)該混合物を110kPa〜800kPaの圧力で加熱する工程、
c)該混合物から臭気減少画分を得る工程、を包含し、該画分が動物脂肪を少なくとも80重量%の量で含有することを特徴とする動物脂肪の臭いを減少する方法を提供する。
80重量%〜90重量%動物脂肪、
1重量%〜7重量%水、
0.5重量%〜3重量%植物油、
0.1重量%〜3重量%アミノ酸、
0.5重量%〜3重量%糖質、
0.1重量%〜4重量%フレーバー剤、
0.01重量%〜0.5重量%ビタミンおよび
0.01重量%〜0.5重量%酸化防止剤を含有する組成物を更に提供する。
85重量%〜88重量%動物脂肪、
4重量%〜6重量%水、
1重量%〜2.5重量%植物油、
0.5重量%〜2重量%アミノ酸、
1重量%〜2.5重量%糖質、
0.1重量%〜2重量%フレーバー剤、
0.1重量%〜0.3重量%ビタミンおよび
0.1重量%〜0.3重量%酸化防止剤を含有する。
糖質、アミノ酸、フレーバー剤およびビタミンを含有する混合物を、表1で記載される量によって調製した。水をこれらの成分と混合した。食用に適しないポーク脂肪(チョイスホワイトグリース)、植物油および別のフレーバー剤を表1よる量で混合物と組み合わせた。チョイスホワイトグリースは、ポーク志向の芳香内容物および少量のタンパク質残渣によりベーコンまたはバーベキュータイプフレーバーを作るための良い候補である。しかしながら、チョイスホワイトグリースは、刺激的な糞便の動物のような臭いを伴う。
嗜好性テストは実施例2で得られたSBFを使用して行われた。本発明のサンプルが、SBFを市販のイヌ科の動物ジャーキートリート(「テストサンプル」)に4重量%の量で導入することによって調製された。比較のために、以下の市販の主要なフレーバー剤を、同じ市販のイヌ科の動物ジャーキートリートに個別に導入した:
1)Firmenich’s Charbroil Flavor(「チャーブロイルサンプル」)
2)Firmenich’s Bacon Flavor(「ベーコンフレーバーサンプル」)
3)Hormel’s Bacon Fat(「ベーコンファットサンプル」)
パップ・ペロニ・オリジナル・ビーフ・レシピ・ケイナイン・トリート(Pup Peroni Original Beef Recipe Canine Treat:市販のトリート)は、嗜好性テストのためのコントロール食品(「コントロールサンプル」)として使用された。
Claims (25)
- 食品組成物のための嗜好性促進剤を調製する方法であって、該方法が
a)水溶液中で、食用に適しない動物脂肪を含む動物脂肪原料と、1以上のアミノ酸、1以上の糖質、1以上の植物油並びに、必要に応じてビタミン、フレーバー剤およびフレーバー前駆体から選択された1以上の別の薬剤と組み合わせて、混合物を形成する工程、
b)該混合物を110kPa〜800kPaの圧力で80℃〜230℃の温度に加熱する工程、
c)該混合物から嗜好性促進剤を得る工程、
を含み、該嗜好性促進剤が動物脂肪を少なくとも80重量%の量で含有し、
工程c)が、混合物から画分を単離することを含有し、単離した画分が動物脂肪を少なくとも80重量%の量で含有し、かつ嗜好性促進剤が単離した画分を含有し、
動物脂肪を含有している画分の単離の間に、画分が混合物の水相から分離され、
前記食用に適しない動物脂肪は、悪臭脂肪酸に起因する強烈で不快な臭いを有するものであり、かつ
アルカリ化剤を、前記動物脂肪の悪臭脂肪酸を中和するように、更に混合物に導入し、
前記糖質を、デキストロース、グルコース、フルクトース、マルトース、ラクトース、アラビノース、キシロース、リボース、マンノース、エリスロース、トレオースおよびガラクトースから選択する、
ことを特徴とする嗜好性促進剤を調製する方法。 - 前記嗜好性促進剤が、動物脂肪を少なくとも90重量%の量で含有する請求項1記載の方法。
- 前記嗜好性促進剤が、動物脂肪からなる請求項2記載の方法。
- 1以上のアミノ酸が、0.1重量%〜3重量%の量で存在する請求項1〜3のいずれかに記載の方法。
- 1以上のアミノ酸が0.5重量%〜2重量%の量で存在する請求項4記載の方法。
- 1以上の糖質が、0.5重量%〜3重量%の量で存在する請求項1〜5のいずれかに記載の方法。
- 1以上の糖質が、1重量%〜2.5重量%の量で存在する請求項6記載の方法。
- 1以上のフレーバー剤が、0.1重量%〜4重量%の量で存在する請求項1〜7のいずれかに記載の方法。
- 1以上のフレーバー剤が、0.1重量%〜2重量%の量で存在する請求項8記載の方法。
- 1以上のフレーバー前駆体が、未処理のタンパク質またはタンパク質加水分解物である前述の請求項1〜9のいずれかに記載の方法。
- フレーバー前駆体が、0.5重量%〜3重量%の量で存在する請求項10に記載の方法。
- 植物油が、0.5重量%〜3重量%の量で存在する請求項1〜11のいずれかに記載の方法。
- 植物油が、1重量%〜2.5重量%の量で存在する請求項12記載の方法。
- 1以上のビタミンが、0.01重量%〜0.5重量%の量で存在する請求項1〜13のいずれかに記載の方法。
- 1以上のビタミンが、0.1重量%〜0.3重量%の量で存在する請求項14記載の方法。
- 工程b)において、混合物が150kPa〜600kPaの圧力で加熱される請求項1〜15のいずれかに記載の方法。
- 圧力が、200kPa〜400kPaである請求項16記載の方法。
- 圧力が、250kPa〜300kPaである請求項17記載の方法。
- アルカリ化剤を更に混合物にpH4.0〜8.5を得るのに十分な量で導入する請求項1〜18のいずれかに記載の方法。
- 食品組成物の嗜好性を向上する方法であって、該方法が
a)水溶液中で、食用に適しない動物脂肪を含む動物脂肪原料と、1以上のアミノ酸、1以上の糖質、1以上の植物油並びに、必要に応じてビタミン、フレーバー剤およびフレーバー前駆体から選択された1以上の別の薬剤と組み合わせて、混合物を形成する工程、
b)該混合物を110kPa〜800kPaの圧力で80℃〜230℃の温度に加熱する工程、
c)該混合物から画分を単離し、その画分が少なくとも80重量%の量で動物脂肪を含有する工程、
d)動物脂肪を含有する画分を食品組成物に導入して食品組成物の嗜好性を向上し、動物脂肪を含有する画分の単離の間に、画分が混合物の水相から分離される工程、を包含し、
前記食用に適しない動物脂肪は、悪臭脂肪酸に起因する強烈で不快な臭いを有するものであり、
アルカリ化剤を、前記動物脂肪の悪臭脂肪酸を中和するように、更に混合物に導入し、
前記糖質を、デキストロース、グルコース、フルクトース、マルトース、ラクトース、アラビノース、キシロース、リボース、マンノース、エリスロース、トレオースおよびガラクトースから選択する、
ことを特徴とする食品組成物の嗜好性を向上する方法。 - アミノ酸が、グリシン、システイン、アラニン、メチオニン、アルギニン、プロリンおよびリシンから選択される請求項20に記載の方法。
- 1以上のアミノ酸が、0.1重量%〜3重量%の量で存在する請求項20又は21に記載の方法。
- 1以上のアミノ酸が、0.5重量%〜2重量%の量で存在する請求項22記載の方法。
- 1以上の糖質が、0.5重量%〜3重量%の量で存在する請求項20〜23のいずれかに記載の方法。
- 1以上の糖質が、1重量%〜2.5重量%の量で存在する請求項24記載の方法。
