Description
気泡入り練り製品の一般的製造方法
まず魚肉のすり身に食塩を添加していわゆる塩摺りを行う。魚肉のすり身としては、スケソウダラ、サメ、クロカワ、グチ、ヒラメ、ホッケ、イトヨリ等の魚肉のすり身を用いることができる。これらのすり身は単独で用いてもよいし、2種以上を組み合わせて用いてもよい。すり身に添加する食塩の量は適宜調節することができるが、好ましくは2〜4%である。塩摺りは、食塩が塩溶性タンパクを溶解する程度に十分に行き渡るように行うことが好ましく、通常は10〜20分程度行う。
本発明においては、基本的に上記気泡入り練り製品の一般的製造方法と同じ方法および条件で製造するものであるが、気泡入り練り製品の少なくとも表面の酸性度を高める(すなわち酸性化する)ことにより、加熱後に気泡入り練り製品の表面に生じるうるみを防止することを特徴としている。より具体的には、気泡入り練り製品の少なくとも表面の酸性度をpH 5.10〜6.55とすることにより、好ましくはpH 5.80〜6.50とすることにより、加熱後に気泡入り練り製品の表面に生じるうるみを防止することができる。
本実施例においては、主原料としてスケトウダラすり身を使用してはんぺんを製造した際に、原料中に混合されたクエン酸によりはんぺん表面のうるみを防止することができるかどうかを検討するために行った。

ただし、85℃の茹で槽で10分間加熱を行う際、この茹で槽に0%、0.05%、0.1%、または0.2%のクエン酸を添加して、茹で槽のpHをそれぞれ6.90、3.29、3.09または2.86に調整し、その中で茹で加熱を行った(表6)。
Claims (1)
- 塩摺り生身に酸類を添加することにより、気泡入り練り製品の全体の酸性度を高めて、気泡入り練り製品の少なくとも表面のpHを5.10〜6.55とすることを特徴とする、気泡入り練り製品のうるみ防止方法。
