Description
キシリトールと難消化性デキストリンとの混合物を含む本発明のキャラメルを調製する。
試験A:キシリトール、Nutriose(登録商標)FB6、比率40/60
試験BおよびC:キシリトール、Nutriose(登録商標)FB6、マンニトール、比率35/55/10
ゼラチンを60℃で1時間、水に溶解する。
脂肪を融解する。
ポリオールとデキストリンとの混合物を135℃で沸騰させた後、他の成分を加え、その後、混合物を90℃に冷却し、ゼラチンならびに香料を加える。
次いで、このマスキットを大理石に広げ、切断または成形する。
このように調製された菓子製品は、清涼効果を持たない。これらの菓子製品はさらに、チョコレートで被覆することができる。
30/70から70/30の間で、様々なキシリトール/デキストリンの比率を試験する。
本試験に用いるデキストリンは、水素添加されたピロデキストリンである。
量は重量パーセントで表す。
次いで、型に流し入れることによって塊を成形させる。
冷却後、菓子製品を型から取り外す。
50/50の比率で、わずかに軟らかい有平糖が得られる。
55/45では、型からの取り外しが困難となり、70/30を超えると、塊は非常に粘着性となる。
30/70未満では、成形が困難であり、混合物は激しく泡立つ。沸騰も困難となる。
得られた菓子製品は、清涼効果を持たない。
量は重量パーセントで表す。
60/40の比率で、満足できる噛み応えのあるペーストのテクスチャが得られる。
65/35の比率を含む菓子製品を、次いでチョコレートで被覆する。それによって、高いキシリトール含量を有し、清涼効果のないチョコレート菓子製品が得られる。
量は重量パーセントで表す。
冷却表面と中性表面とを有する菓子製品を消費者に提供するために、高いキシリトール含量を有し清涼効果を持たない本発明の層と、結晶化したキシリトールだけの層とを含む有平糖を調製する。これらの菓子製品は、次の配合に従って調製する。
清涼効果を持たない層(透明黄色)
キシリトールおよびデキストリンNutriose(登録商標)FB06を水中で混合し、その混合物を120℃で沸騰させる。次いで、香料、酸、および着色料を添加する。この混合物を型で成形し、その後、冷却する。
85〜90%のキシリトールをまず95℃で溶融する。次いで、残りの10〜15%のキシリトールをプライマーとして、溶融したキシリトールシロップに加え、慎重にシロップを混合し、その後、前述の層の上に手作業で載せ、得られた菓子製品を冷却し、その後、回収する。
30/70から70/30の間で、様々なエリスリトール/デキストリン(E/D)の比率を試験する。
本試験に用いる難消化性デキストリンは、分枝マルトデキストリンである。
量は重量パーセントで表す。
Claims (7)
- キシリトールと難消化性デキストリンとの非晶質混合物を含むことを特徴とし、乾燥ベースの重量で少なくとも25%のキシリトールを含み、清涼効果を持たない、又は低減された清涼効果を有する無糖菓子であって、前記キシリトール/デキストリンの重量比が35/65から40/60であり、有平糖またはキャラメルである、無糖菓子。
- 乾燥ベースで25から55%のキシリトール、および15から75%のデキストリンを含むことを特徴とする、請求項1に記載の菓子。
- マンニトール、マルチトール、イソマルト、イヌリン、またはアラビアゴムをさらに含むことを特徴とする、請求項1又は2に記載の菓子。
- 乾燥ベースの重量で36から42%のキシリトール、18から24%のデキストリン、および5から15%のマンニトールを含むことを特徴とする、請求項3に記載の菓子。
- 前記デキストリンが水素添加されたものであることを特徴とする、請求項1から4のいずれか一項に記載の菓子。
- ダーク、ホワイト、またはミルクの無糖チョコレートに組み入れられていることを特徴とする、請求項1から5のいずれか一項に記載の菓子。
- 前記チョコレートが、マルチトールチョコレートであることを特徴とする、請求項6に記載の菓子。
