casei)のスターターを接種し、pH3.6になるまで培養し、それを冷却して発酵物を得た。次いで、この発酵物を15MPaで均質化処理した後、その23重量部に表1に示す成分のシロップ77重量部をそれぞれ混合し、試験品1〜3を得た。なお、シロップは、表1に示す成分を水に溶解し、112℃で10秒間プレート殺菌した後冷却することにより調製した。

酸性乳飲料の製造(4):
脱脂粉乳14.9質量%、ぶどう糖3.5質量%を溶解した水溶液を121℃で3秒間プレート殺菌後、ラクトバチルス・カゼイのスターターを接種し、pH3.6になるまで培養し、冷却して発酵物を得た。次いで、この発酵物を均質化処理(15MPa)し、その23重量部に、表7に示す組成にて別途調製したシロップ77重量部をそれぞれ混合し、可溶性固形分含量が異なる製品15〜23を得た。なお、シロップは、各成分を水に溶解し、112℃で10秒間プレート殺菌した後冷却することにより調製した。
Claims (10)
- ポリデキストロースと、次の群(a)から選ばれる糖質の少なくとも1種以上とを含有し、これらの可溶性固形分の合計が12.0質量%〜17.0質量%であり、実質的に増粘安定剤および乳原料由来のカルシウム以外の水溶性カルシウム源を含有しないことを特徴とする酸性乳飲料。
(a)グルコース、フラクトース、砂糖、トレハロース、マルトース、エリスリトール
、ソルビトール、キシリトール、マルチトール、ラクチトール、パラチノース、
ガラクトオリゴ糖 - 前記群(a)から選ばれる少なくとも1種以上の糖質を、5.0質量%以上含有するものである請求項1記載の酸性乳飲料。
- カロリーが、50Kcal/100ml以下である請求項1または2に記載の酸性乳飲料。
- ポリデキストロースと、次の群(a)から選ばれる糖質の少なくとも1種以上とを含有し、これらの可溶性固形分の合計が12.0質量%〜17.0質量%であり、かつ群(a)から選ばれる少なくとも1種以上の糖質の含有量が5.0質量%以上であって、乳原料由来のカルシウム以外の水溶性カルシウム源をカルシウム量として0.06質量%以下含有し、実質的に増粘安定剤を含有しないことを特徴とする酸性乳飲料。

、ソルビトール、キシリトール、マルチトール、ラクチトール、パラチノース、
ガラクトオリゴ糖 - ポリデキストロースと、次の群(a)から選ばれる糖質の少なくとも1種以上とを含有し、これらの可溶性固形分の合計が12.0質量%〜17.0質量%であり、かつ群(a)から選ばれる少なくとも1種以上の糖質の含有量が7.0質量%以上であって、乳原料由来のカルシウム以外の水溶性カルシウム源をカルシウム量として0.06質量%より多く、0.1質量%以下含有し、実質的に増粘安定剤を含有しないことを特徴とする酸性乳飲料。
(a)グルコース、フラクトース、砂糖、トレハロース、マルトース、エリスリトール
、ソルビトール、キシリトール、マルチトール、ラクチトール、パラチノース、
ガラクトオリゴ糖 - カロリーが、50Kcal/100ml以下である請求項4または5に記載の酸性乳飲料。
- 酸性乳飲料ベースに、ポリデキストロースと次の群(a)から選ばれる少なくとも1種以上の糖質とを、これらの可溶性固形分の合計が12.0質量%〜17.0質量%となるように配合することを特徴とする実質的に増粘安定剤および乳原料由来のカルシウム以外の水溶性カルシウム源を含有しない酸性乳飲料の製造方法。

、ソルビトール、キシリトール、マルチトール、ラクチトール、パラチノース、
ガラクトオリゴ糖 - 前記群(a)から選ばれる少なくとも1種以上の糖質を、5.0質量%以上配合するものである請求項7記載の酸性乳飲料の製造方法。
- 酸性乳飲料ベースに、ポリデキストロースと次の群(a)から選ばれる少なくとも1種以上の糖質とを、これらの可溶性固形分の合計が12.0質量%〜17.0質量%であり、かつ群(a)から選ばれる少なくとも1種以上の糖質の含有量が5.0質量%以上となるように配合することを特徴とする乳原料由来のカルシウム以外の水溶性カルシウム源をカルシウム量として0.06質量%以下含有し、実質的に増粘安定剤を含有しない酸性乳飲料の製造方法。
