Description
両端が開放された垂直配向紫外線透過チューブを通じて、前記微生物を含む水の渦乱流を発生させること、
前記チューブ内に、及び前記渦流を介して紫外線の流れを生成し、それによって、前記チューブを通過している間に前記微生物を前記紫外線にさらすこと、及び
前記チューブを励起した後に前記水を回収することを含む方法であるといえる。
紫外線を透過させ、上端及び下端を有する垂直配向チューブと、
前記チューブ内に渦流を発生させるように、前記上端に水を供給する手段と、
前記チューブ、及び前記微生物を含む水に紫外線を放射するように構成された、前記チューブを囲む放射手段と、
前記チューブの前記下端からの排出手段とを備えた装置であるといえる。
装置は、送込みタンク12と、保持タンク16と、主タンク21とから構成される。装置の紫外線処理部はチャンバ10に収容されており、その構成については、図2を参照しながら以下により詳細に説明する。送込みタンク12には、汚染物質を避けるためのカバー15が設けられている。送込みコンベヤ11がシュート26に合わせて配置されて、(食料品等の)製品をタンク12に供給する。タンク12の内部には処理液33がある。処理液は水、又は当業者に知られている防腐剤を含む水であってもよい。製品がスライスされた生鮮果物である場合は、1から7%(W/W)の水酸化カルシウム溶液を使用できる。
図1を参照しながら装置の全体的な動作を説明する。食料品、例えばスライスされたリンゴを送込みコンベヤ11上に配置し、シュート26を下って送込みタンク12内の処理液33に入れる。処理液33は防腐剤を含有する。好ましい処理水溶液は、1から7%のW/W水酸化カルシウムを含有する。
Claims (10)
- 少なくとも一つの食品片を紫外線で処理して、食品片上の腐食性微生物を低減させる装置において、
少なくとも一つの部分を垂直に延在させた、入口のある上方の第1端と出口のある下方の第2端とを有する、紫外線が透過可能のチューブ、
少なくとも一つの部分に渦流を生じさせるようにして、チューブの第1端からチューブに液体と食品片とを供給する供給手段、
チューブの周りに設けられ、チューブ内に紫外線を放射する紫外線放射手段、ならびに
チューブの第2端から液体と食品片とを取り出す手段
を有する腐食性微生物を低減させる装置。 - チューブの第2端から液体と食品片とを取り出す手段が、液体と食品片を受けるタンクおよびタンクから食品片を取り出すコンベヤとを有する、請求項1に記載の装置。
- 供給手段が、液体と食品片をそれぞれ受けて一緒にする供給タンクを含む、請求項1または2に記載の装置。
- 前記チューブがフッ化ポリマー製である、請求項1から3のいずれか一項に記載の装置。
- チューブの第2端から液体と食品片とを取り出す手段が、液体を供給手段に戻す循環手段を含む、請求項1から4のいずれか一項に記載の装置。
- 前記液体に水酸化カルシウムを含んでいる、請求項1から5のいずれか1項に記載の装置。
- 前記紫外線放射手段の外周は、反射遮蔽板で囲まれている、請求項1から6のいずれか一項に記載の装置。
- 供給タンク内で液体と食品片を導入して一緒にする段階、
液体と食品片を紫外線が透過可能なチューブを通して渦流を生起させながら流下させる段階、
液体と食品片を流下させる際にチューブの周りから紫外線をチューブ内に照射させる段階、ならびに
チューブを流下した液体と食品片を取り出す段階
を有する食品片上の腐食性微生物を低減させる方法。 - チューブから液体と食品片を取り出し後に液体と食品を分離する段階をさらに含む、請求項8に記載の方法。
- 食品片から分離した液体を供給タンクに戻す段階をさらに含む、請求項9に記載の方法。
