Claims (2)
- 食品素材を移動させながら加熱するための加熱伝達手段と、該加熱伝達手段を加熱すべくその被加熱面から所定のクリアランスをあけて配置される平面視が長方形ないし楕円形の複数個の誘導加熱コイルと、を備える回転ドラム式食品連続加熱機であって、
前記加熱伝達手段が回転ドラムとされ、前記誘導加熱コイルは、その長辺もしくは長軸が前記回転ドラムの回転方向である被加熱面の進行方向に対して傾斜せしめられるとともに、前記進行方向に直交する方向に沿って所定の離隔距離を持って並設されており、かつその加熱面全体が前記回転ドラムの外周面に沿うように螺旋状に湾曲せしめられており、さらに、隣り合う誘導加熱コイル同士が、前記進行方向から見て部分的にオーバーラップするように、前記進行方向に対する前記誘導加熱コイルの傾斜角度及び前記誘導加熱コイル相互の離隔距離が設定されており、さらに、前記誘導加熱コイル相互の離隔距離が調節可能とされており、さらに、前記誘導加熱コイルの前記進行方向に対する傾斜角度、前記誘導加熱コイルの前記被加熱面からのクリアランス、及び、前記誘導加熱コイルの前記進行方向に直交する方向の位置、のうちの少なくとも一つが調節可能とされていることを特徴とする回転ドラム式食品連続加熱機。 - 前記各誘導加熱コイルに対応して、加熱エリア毎に前記加熱伝達手段の被加熱面の温度を測定する非接触型温度測定器が配備され、前記誘導加熱コイル冷却用の冷却水を前記温度測定器に導いて冷却するようにされていることを特徴とする請求項1に記載の回転ドラム式食品連続加熱機。
