Description
鉄は、多くの様々な形態で食品及び飼料に添加することができる。金属鉄だけでなく、硫酸鉄のような鉄の無機塩、及び、グルコン酸鉄又はフマル酸鉄のような有機塩も使用することができる。食品強化のための、基本的に3種類の異なるタイプの鉄エレメント(elemental iron)、即ち、還元鉄又はスポンジ鉄、カルボニル鉄及び電解鉄が存在している。
生物学的利用能の評価は、生体外研究、動物研究又はヒト研究のような様々な方法で実施することができる。鉄粉の生物学的利用能も他の鉄化合物の生物学的利用能も通常、硫酸鉄と比較して測定される。
そのような粉末の強化量(fortifying amount)(約1〜200ppm)は、食品又は飼料の中に含有されているのが望ましい。
出発材料として使用する酸化鉄は、天然赤鉄鉱(Fe2O3)である場合がある。もう1つの代替案は、酸再生プロセスからの副産物として得られるタイプの酸化鉄を使用することである。所望の特性を有する生成物を得るために、該出発材料の粒径は好ましくは、55μmを超えないことが望ましい。
前記出発材料の還元は、水素ガス、又は、炭素と水素ガスとの混合物を用いて行う。その還元は、1100℃以下の温度のベルト炉の中で行うのが好ましい。重要な特徴は、その還元が、結果として得られる生成物が、粉末の形態になるか、又はその粒子形状及び他の特性に如何なる影響をも与えることなく、若しくはほんの僅かな影響しか与えないで容易に粉砕することのできる僅かに焼結されたケーキの形態になるようなやり方で実施されることである。
前記鉄粉の重大かつ決定的に重要な特徴は、その形状が多孔質で不規則であること、及び結果としてその見かけ密度(AD)が低いことである。ADは、2g/m2未満であるのが好ましいことが分かった。更に、該鉄粉の気孔は開放されていることが望ましく、それによって、該鉄粒子の中に胃液が浸透するのが容易となり、該鉄の十分に高い溶解率が提供される。低い開放気孔率は、約7.86g/m2である鉄の真の密度の値に近い粒子密度の値として現れる。更にまた、ADとPDとの間の関係は0.3未満であるのが望ましいことが分かった。
前記鉄粉の生物学的利用能を評価するための方法として、我々は、pH1及び37℃の塩酸に鉄粉50gを溶解させる段階を包含する方法を用いた。溶解した鉄の量は、30分後に測定し、以下の表2の溶解率として記載される。本発明によると、該鉄粉は、37℃及びpH1の塩酸に入れて30分後、少なくとも40重量%となる溶解率を有するのが望ましいことが分かった。
本発明は更に、次の非制限的実施例によって例示される。
5〜20μmの粒径を有する赤鉄鉱を、1mm未満の粒径を有するコールと混合した。添加したコールの量は、12重量%であった。得られた混合物は、約1000℃の炉で還元した。炉の端部で水素ガスを添加して、赤鉄鉱材料の流れと反対方向に流れるようにした。水素ガスの添加量は、還元鉄1トン当り610m3であった。得られたスポンジ鉄ケーキは、標準的製粉装置で穏かに粉砕して、325メッシュスクリーンで篩い分けした。
Claims (4)
- 55μm未満の粒径を有する酸化鉄粉末であって、天然赤鉄鉱(Fe2O3)と、酸再生プロセスからの副産物として得られる酸化鉄とから成る群から選定される、前記酸化鉄粉末の出発材料を与える工程と、
前記酸化鉄粉末を1100℃未満の温度で還元して、多孔質焼結ケーキにする工程と、
前記の得られたケーキを粉砕して篩い分けし、所望の粒径を有する粉末にする工程とを包含する、食用還元鉄粉末の製造方法であって、
前記食用還元鉄粉末が、不規則の形状の粒子を有する還元鉄粉末から本質的に成る鉄粉であって、該鉄粉が、0.3未満のAD/PD比(式中、ADはg/cm3単位の見かけ密度であり、PDはg/cm3単位の粒子密度である)を有しており、BET法によって測定されるそれら粉末粒子の比表面積が、300m2/kgを超えており、しかも、その平均粒径が5〜45μmの間である、前記製造方法。 - 前記還元は、水素ガスを用いて行う、請求項1に記載の方法。
- 前記還元は、炭素と水素ガスとの混合物を用いて行う、請求項1に記載の方法。
- 前記還元は、ベルト炉中で実施する、請求項1に記載の方法。
