氷菓の一部分を等量のグリセロールと混合し、−10℃の温度で顕微鏡によって観察する。測定は、顕微鏡およびカメラを備えた−10℃のチャンバで行うことができる。このようにして、最終製品、および熱ショックに供した製品の結晶の平均直径(μm)を測定することができる(顕微鏡倍率129)。
これらの実施例の目的は、液体植物油で作られ、気泡含有冷凍デザートの調製に現在用いられている従来の植物性脂肪で作られた製品と同等のテクスチャおよび官能特性を示す、気泡含有氷菓を製造することである。
PUFAに富む油の油混合物:ナタネ油と高融点脂肪画分との混合物;
スイートホエイ粉末:Euroserumより入手した非脱塩ホエイタンパク質、タンパク質10%〜12%;
BBAより入手したスキムミルク粉末;
PGMS:Daniscoより入手したモノステアリン酸プロピレングリコールPGMS SPV(登録商標);
UMG:Daniscoより入手した不飽和モノグリセリドDIMODAN UP/B(登録商標);
SMDG:Daniscoより入手した飽和モノ−ジグリセリドCREMODAN60Veg(登録商標);
グアーガム:Habgenより入手したProcol G2;
グルコースシロップ:Roquetteより入手したGlucose MD40

Claims (11)
- 12重量%以下の低減された脂肪含量を有する気泡含有氷菓の官能特性を改善する方法であって、改善されたテクスチャ特性および良好な熱ショック安定性を有する、前記低減された脂肪含量を有する気泡含有氷菓の製造において、少なくとも0.2重量%の量で、脂肪酸のプロピレングリコールモノエステルと、0.04重量%〜0.16重量%の量で、不飽和モノグリセリドまたは飽和モノ・ジグリセリドとの組み合わせからなる主乳化剤を添加することを含む方法。
- 前記脂肪酸のプロピレングリコールモノエステルが、プロピレングリコールモノステアラート/パルミタートである、請求項1に記載の方法。
- 前記気泡含有氷菓が、
0重量%〜12重量%の脂肪、
4重量%〜10重量%の無脂乳固形分、
10重量%〜25重量%の甘味料、
0重量%〜0.5重量%の安定剤
を含み、かつ
30体積%〜150体積%のオーバーランを有する、請求項1に記載の方法。 - 前記気泡含有氷菓が、2重量%〜12重量%の脂肪を含む、請求項3に記載の方法。
- 前記無脂乳固形分が、粉末化または脱脂・濃縮されたスイートホエイである、請求項3に記載の方法。
- 前記無脂乳固形分が、粉末化または濃縮されたスキムミルクである、請求項3に記載の
方法。 - 前記気泡含有菓子が、0.1重量%〜0.5重量%の量で、単独または混合物の形態で用いられる、イナゴマメ粉、グアー粉、アルギン酸塩、カルボキシメチルセルロース、キサンタン、カラギーナン、ゼラチン、およびデンプンからなる群から選択された少なくとも1種の安定剤を含む、請求項3に記載の方法。
- 前記甘味料が、スクロース、グルコース、フルクトース、グルコースシロップ、ラクチトール、ポリデキストロース、イヌリン、およびこれらの物質の混合物からなる群から選択される、請求項3に記載の方法。
- 前記気泡含有菓子が4重量%以下の脂肪を含む、請求項3に記載の方法。
- 前記脂肪酸のプロピレングリコールモノエステルが0.2重量%〜0.3重量%の量で提供される、請求項9に記載の方法。
