Description
本発明は、乳を個々の成分に分離するための装置、乳から成分を分離する方法、及び分離された成分から調製された組成物に関する。
栄養の摂取は、健康及び快適な暮らしを得るため、ならびに多くの慢性疾患を予防するために重要なものの1つである。栄養製品は、こうした分野において重要な役割を果たしており、ここ数年では、容易に入手可能で手軽な栄養製品を一般の人々に提供しようという試みに特に力が注がれている。健康を維持するために、人は人間栄養に不可欠な必須栄養素を摂取しなくてはならない。必須栄養素には、脂肪、炭水化物及びタンパク質のような多量栄養素と、ビタミン及びミネラル(微量元素及び電解質を含む)のような微量栄養素とが含まれる。
本発明の1つの課題は、乳を個々の成分に分離するために使用することのできる装置を提供することである。
本発明は、乳の特定の成分を含有するようにつくられた栄養乳組成物及び乳製品に関する。本発明の組成物は、随意で、必須ではないが栄養機能性の成分を含有することができる。本明細書で使用する「乳の成分」又は「乳成分」という表現は、乳の個々の成分を指すことを意図して用いられており、例えばバター脂肪、乳タンパク質、非タンパク性窒素、ラクトース及びミネラルを指すが、これらに限定されない。
1.全乳から分離されたバター脂肪を、UF残留物、RO残留物及び水又はRO透過物と合わせることによって、バター脂肪を1〜3重量%、タンパク質を2.5〜5.5重量%、ミネラルを0.5〜1.0重量%及びラクトースを1〜3重量%含む混合組成物を、調製する。
2.全乳から分離されたバター脂肪を、UF残留物、RO残留物及び水又はRO透過物と合わせることによって、バター脂肪を0.1〜0.3重量%、タンパク質を6〜9重量%、ミネラルを1〜2重量%及びラクトースを2〜5重量%含む低脂肪で且つ高タンパク質の組成物を調製する。
3.UF残留物、RO残留物及び水又はRO透過物を含んでいる、無脂肪、高タンパク質、高ミネラル且つ低ラクトース組成物。
4.RO残留物を含んでいる、低ラクトース、低脂肪、低タンパク質且つ高ミネラル製品。
5.UF残留物及びRO残留物を含んでいる、低脂肪、高タンパク質、低ラクトース且つ高ミネラル製品。
6.バター脂肪、脱脂乳、MF透過物、MF残留物、UF透過物、UF残留物、DF透過物、DF残留物、NF残留物、NF透過物、RO透過物及びRO残留物からなる群から選択される1種以上の乳成分から調製される組成物。
本発明の一実施形態では、次の装置を用いて乳成分を分離した。A CMRPX 618-HGVコールドミルクセパレータ(Alfa Laval)を使用して、華氏45°より低い温度で遠心力によって乳をクリーム及び脱脂乳に分離する冷却ボウル機械分離(cold bowl mechanical separation)を行った。クリームを分離した後、続いて脱脂乳を限外ろ過システム、ナノろ過システム及び逆浸透システムに通した。限外ろ過システムでは、約1000〜10000ダルトンの分子分離が可能な膜フィルタ(図3)を使用した。限外ろ過プロセスは、華氏45°より低い温度で、乳の流れが単一方向であって通過中乳が二度同じ膜を通過することのない単一の通過システムで行った。限外ろ過後、限外ろ過プロセスから得られた透過物をナノろ過システムに通過させた。ナノろ過システムでは、約300〜1000ダルトンの分子分離が可能な膜フィルタを使用した。ナノろ過後、透過物に対し、約100〜180ダルトンの分子分離が可能な膜フィルタを用いた逆浸透を行った。
バター脂肪を2重量%、タンパク質を4.5重量%、ミネラルを0.8重量%及びラクトースを2重量%含んだ混合組成物を、バター脂肪を5.01体積%、UF残留物を32.1体積%、RO残留物を15.7体積%及び水を47.19体積%合わせることによって調製した(表3参照)。
バター脂肪を0.26重量%、タンパク質を8.6重量%、ミネラルを1.6重量%及びラクトースを3重量%含んだ低脂肪組成物を、UF残留物を63.6体積%及びRO残留物を36.4体積%合わせることによって調製した(表4参照)。
Claims (7)
- 乳がろ過装置を単一方向に通過することを特徴とする、乳成分を分離する方法であって、
該方法が
第1の液体透過物及び第1の残留物を得るために限外ろ過手段を使用して乳が限外ろ過され、第1の透過物のラクトース含有量が5.5重量%以下である、第1ろ過工程、
第2の液体透過物及び第2の残留物を得るためにナノろ過手段を使用して前記第1の液体透過物がナノろ過され、第2の透過物のラクトース含有量が0.15重量%以下である、第2ろ過工程、及び
第3の液体透過物及び第3の残留物を得るために逆浸透手段を使用して、第2の液体透過物が逆浸透され、第3の残留物のラクトース含有量が0.06重量%以下である、第3ろ過工程を含んでなり、
第1の残留物、第2の残留物及び第3の残留物が、それぞれ第1出口部、第2出口部及び第3出口部を介してろ過装置から除かれる、方法。 - 任意に行う分離工程をさらに含み、該分離工程を前記限外ろ過の工程の前に行う、請求項1に記載の方法。
- マイクロろ過工程をさらに含み、該マイクロろ過工程を、任意に行う分離工程の後に且つ限外ろ過工程の前に行う、請求項2に記載の方法。
- 透析ろ過工程をさらに含み、該透析ろ過工程を、限外ろ過工程の後に且つナノろ過工程の前に行う、請求項2に記載の方法。
- 第1の残留物のタンパク質含有量が少なくとも9重量%であり、ラクトース含有量が少なくとも4重量%である、請求項1に記載の方法。
- 第2の残留物のラクトース含有量が少なくとも13重量%である、請求項1に記載の方法。
- 第3の液体透過物のラクトース含有量が0.05重量%未満であり、ミネラル含有量が0.05重量%未満である、請求項1に記載の方法。
