Description
31.3重量%、乳糖11.4重量%、全粉乳12.5重量%、卵黄粉末1.0重量%の粉体を順次投入し、加熱、撹拌・混合し、次にロール掛けし、次に残りの油脂成分を加え混合、続けて冷却、固化して得た。なお、試作工程中の室内の湿度環境は特別管理しなかった。
Claims (3)
- チョコレート(粉末チョコレートを除く)の原料組成物中に、卵黄粉末が1.0重量%〜5.0重量%添加され、食品衛生法上の食品添加物であって食品に添加した場合に表示義務がある乳化剤が添加されておらず、繰り返し溶解、固化されることを特徴とする乳化剤無添加チョコレート。
- チョコレート(粉末チョコレートを除く)であって、加熱撹拌機で油脂成分を溶解し、前記油脂の一部に糖類、1.0重量%〜5.0重量%の範囲になるよう卵黄粉末、ココア成分を添加し、加熱、撹拌・混合し、次にロール掛けし、次に残りの油脂成分を加え混合、続けて冷却、固化してなり、食品衛生法上の食品添加物であって食品に添加した場合に表示義務がある乳化剤が添加されておらず、繰り返し溶解、固化されることを特徴とする乳化剤無添加チョコレート。
- チョコレート(粉末チョコレートを除く)の製造方法であって、加熱撹拌機で油脂成分を溶解し、前記油脂の一部に糖類、1.0重量%〜5.0重量%の範囲になるよう卵黄粉末、ココア成分を添加し、加熱、撹拌・混合し、次にロール掛けし、次に残りの油脂成分を加え混合、続けて冷却、固化してなり、食品衛生法上の食品添加物であって食品に添加した場合に表示義務がある乳化剤が添加されておらず、繰り返し溶解、固化されることを特徴とする乳化剤無添加チョコレートの製造方法。
