Claims (2)
- 解凍した冷凍魚介類を、アルカリ性調整剤に浸した後に、有機酸を含有するヌメリとり剤に浸して、表面を酸性にし、ヌメリを除去する、冷凍魚介類の処理方法。
- 上記冷凍魚介類が剥きエビである、請求項1に記載の冷凍魚介類の処理方法。
