Description
1.力が、蒸気の形態で供給される。
2.製品の周囲の蒸気ゾーンが、凝結および断熱を防止するために連続的に除去される。
3.表面内の自然の微細構造は、蒸気が全ての細菌に到達するのを防げない。
1.製品の表面が、製品を取り囲む空気ゾーンを通って熱が伝導される場合よりもかなり速く蒸気温度まで加熱される。
2.自然のポケットおよび孔に隠れた細菌が、食品それ自体にほとんど影響を与えることなく加熱される。
超音波発生デバイスは、たとえばジェット流およびキャビティで形成されてもよい。
添付の図面を参照にして本発明を以下でさらに詳細に説明する。
この装置は、必ずしも静止している必要はなく、移動式ユニットであってもよい。
Claims (15)
- 固体製品を、その表面処理と、前記製品の表面に放出される液体の蒸気と、超音波とによって消毒する方法であって、蒸気を放出させるのと同時に超音波を発生させ、個々の分子の移動が殺菌されるバクテリアまたは細菌の寸法を超えるような高い音圧で超音波領域の振動数で蒸気を振動させ、該蒸気を固体製品のほうへ方向付けそして該固体製品に接触させることを特徴とする方法。
- キャビテーションを引き起こすことなく超音波を発生させることを特徴とする請求項1に記載の方法。
- 同時の超音波発生が、蒸気を超音波発生デバイスに通し、前記蒸気を超音波領域の振動数で振動させることによって提供されることを特徴とする請求項1に記載の方法。
- 前記超音波発生デバイスが、ジェット流およびキャビティで形成されることを特徴とする請求項3に記載の方法。
- 前記超音波発生デバイスが、蒸気および超音波を発生させるためのホイッスルで形成されることを特徴とする請求項3に記載の方法。
- 比較的短い処理時間を特徴とする請求項1乃至5のいずれか1項に記載の方法。
- 前記液体の蒸気が水蒸気である請求項1乃至6のいずれか1項に記載の方法。
- 少なくとも1つの蒸気通路(3)および開口(2)を有する、固体製品の表面上の細菌に対抗するための蒸気デバイス(1)を備える請求項1に記載の方法を実施するための消毒装置であって、キャビティ(4)が、前記開口(2)の近傍に設けられ、使用中に前記蒸気通路(3)を通ってかなり高い圧力下で水蒸気のジェットが供給されるように構成され、それによって前記開口(2)から放出された水蒸気が、前記キャビティ(4)によって決定される超音波振動数で振動させられるとともに、蒸気デバイス(1)が、その内壁が前記蒸気通路(3)の外壁を画定する外側部分(5)と実質的に前記蒸気通路(3)の外壁を画定するとともに前記開口(2)も画定する内側部分(6)とを備えることを特徴とする装置。
- 前記キャビティ(4)が、蒸気デバイスの前記開口(2)から調節可能に離隔されていることを特徴とする、請求項8に記載の装置。
- 前記キャビティ(4)が、前記開口(2)に隣接して配置され、前記開口(2)と一体に形成されることを特徴とする請求項8に記載の装置。
- 前記外側部分(5)および前記内側部分(6)が、前記蒸気通路(3)を通って供給される水蒸気が実質的にキャビティによって決定される超音波振動数で振動されるようにして前記キャビティ(4)に向かって移送されるように互いに対して固定されていることを特徴とする請求項8乃至10のいずれか1項に記載の装置。
- 前記キャビティ(4)を伴い、前記蒸気デバイス(1)が、ハートマン(Hartmann)発生器、蒸気ジェットまたはディスク・ジェットであることを特徴とする請求項8乃至11のいずれか1項に記載の装置。
- 前記蒸気デバイスが、ディスク状の本体として形成されていることを特徴とする請求項8乃至12のいずれか1項に記載の装置。
- 前記蒸気デバイスが、レール状の本体として形成されていることを特徴とする請求項8乃至12のいずれか1項に記載の装置。
- 請求項8乃至14のいずれか1項に記載の装置を用いて、表面処理によって製品を消毒する方法。
