Claims (6)
- 生若しくは前処理が施された一種類若しくは複数種類の魚介類の刺し身を容器に盛り付け、これを内フィルムによって真空包装し、これを凍結した後、外フィルムによりガス充填包装を行うことを特徴とする刺し身盛り付け冷凍食品の製造方法。
- 包装する前に、刺し身の少なくとも表面を凍結させておくことを特徴とする請求項1記載の刺し身盛り付け冷凍食品の製造方法。
- 前記真空包装に用いる前記内フィルムを低バリアー性とし、前記ガス充填包装に用いる前記外フィルムを高バリアー性としたことを特徴とする請求項1,2のいずれか1項に記載の刺し身盛り付け冷凍食品の製造方法。
- 前記真空包装は、透明で弾力性を有する内フィルムを用いた深絞り真空包装であることを特徴とする請求項1〜3のいずれか1項に記載の刺し身盛り付け冷凍食品の製造方法。
- 前記ガス充填包装は、透明な外フィルム内に炭酸ガス,窒素ガス若しくは炭酸ガス及び窒素ガスの混合ガスを充填したことを特徴とする請求項1〜4のいずれか1項に記載の刺し身盛り付け冷凍食品の製造方法。
- 前記凍結は、−35℃以下のエアブラスト、液体窒素、若しくは液体炭酸ガスによりなされることを特徴とする請求項1〜5のいずれか1項に記載の刺し身盛り付け冷凍食品の製造方法。
