脂肪も蓄積されるが、厚くはっきりとした脂肪の層が現
れ、油身と呼ばれる部分が増加するものであった。脂肪
が蓄積された肉であっても油身は嗜好に合わず、またこ
れが必要以上に現れた肉は、例えば一度冷凍し、再びこ
れを解凍した時に油身の層と筋肉の層とが分離し易くな
るという欠点がある。従来の飼料添加剤について、本発
明者等が種々検討したところ、特定の不飽和脂肪酸カル
シウム塩を用いると肉質が改善されることを見出し、先
に出願(特願平3−353441号)した。しかしなが
ら、脂肪酸カルシウム塩は嗜好性が若干低く、なれるま
では他の飼料の採餌量を低下させる傾向があり、また給
与することができても体内に取り込まれる量及び筋間に
蓄積される量が十分でない等の問題点があり、さらに改
良の余地があった。
