Abstract
人工および／または天然の色素を含み、歯との極めて短い接触時間後、即時のホワイトニング効果を生成する能力を特徴とする、歯用瞬間光ホワイトニングのための菓子製品が開示される。
Description
本発明は、少なくとも１つの青色色素を含有する速溶性マトリックスを含むかまたはそれからなる、歯用瞬間光ホワイトニングのための菓子製品に関する。
先行技術
紫色～青紫色のスペクトルを有する色素を組み合わせたものを使用した歯用光ホワイトニング製品が知られている。適用すると、前記製品により、歯は、歯が本来反射するであろう光よりも白い光を反射するようになる（ＵＳ６０３０２２２）。

前記色素またはその混合物の使用は、一般に菓子製品の分野、特にチューインガムにおいても知られており、一般的にＵＳ２００６／０１０４９２２において他の食品と一緒に記載されている。
ＵＳ２００６／０１０４９２２は、４８０～６６０nmの範囲の最大吸収波長を有する色素の使用を記載している。ＵＳ２００６／０１０４９２２に記載されている食品は、好ましくは、所望のホワイトニング効果を発揮するために、歯との接触が可能な限り長く保たれなければならない。チューインガムは、咀嚼中に徐々に色素を放出するように設計されている。しかしながら、その先行技術は、菓子製品の好ましい処方も、前記処方が有し得る効果の定量も報告していない。
色素を含有する処方は、望ましくない着色効果（例えば、舌上で）を有し得る。先行技術は、瞬間光ホワイトニングに関して効果をなお保ちながら、舌を着色しないまたは舌を最小限にしか着色しない青色色素の処方を発見していない。
発明の説明
今般、適切な色素を含有しかつ製品の急速溶解後に色素が素早く利用可能になるように処方された菓子製品を使用することによって、食品を長期間摂取することなく歯用光ホワイトニングを達成可能であることが見いだされた。これは、先行技術において報告されているプロセスとは異なるものである。

特に、歯用瞬間光ホワイトニングは、Ｅ１３１、Ｅ１３２、Ｅ１３３およびスピルリナから選択される少なくとも１つの青色色素を含有する速溶性マトリックスを含むかまたはそれからなる菓子製品を摂取することによって得ることができる。
好適な処方は、前記色素を含有する飴コーティング層を備えた速溶性錠剤またはチューインガムを含む。他の処方は、速溶性の飴またはフォンダンなどの他の速溶性層を備えたチューインガムを含む。
「速溶性」は、５分未満、好ましくは４分未満の時間のことを意味する。例えば、速溶性の菓子調製物は、３～４分でまたは３０秒未満で溶解することができる。
本発明の目的に適した色素は、パテントブルー（Patented Blue）Ｖ、インディゴティン（indigotine）、ブリリアントブルー（Brilliant Blue）ＦＣＦおよびスピルリナを含む。パテントブルーＶ、インディゴティンおよびブリリアントブルーＦＣＦは、欧州食品添加物符号化システムによって、それぞれＥ１３１、Ｅ１３２およびＥ１３３と表示される。インディゴティン（Ｅ１３２）およびスピルリナ色素が好ましく、後者は、ガムで１４００±１４０または錠剤で１３５～１６５の強度指数（intensity index）を有する。
スピルリナは、海藻に由来する天然色素であり、強度指数（染着の強さ）に記載された値に規格化されている。マルトデキストリン、デンプンまたはアラビアガムなどの固形の還元糖不含担体は、スピルリナの染着強度を１０００超に、特に好ましくは１２００超に増加可能であるので、これらを使用することが好ましい。
スピルリナがチューインガムの飴コーティング中に使用される場合、１４００±１４０の強度指数を有するスピルリナを、ガム１個当たり０．１～１００mgの範囲の量で使用することが好ましい。さらにより好ましい量は、０．４～２０mg、特に０．６～５mgの範囲である。
飴コーティングを備えたチューインガムの場合、前記コーティング中に存在するＥ１３２、Ｅ１３１またはＥ１３３色素の量は、一般に、０．１５mg～０．８５mgの範囲である。特に、マトリックスは、Ｅ１３２、Ｅ１３１もしくはＥ１３３色素を０．１５～０．８５mgの範囲の量で、または１４００±１４０の強度指数を有するスピルリナ色素を０．１～１００mgの範囲の量で含有する飴コーティングである。
飴コーティングは、好ましくは、キシリトール、イソマルト、マルチトール、ソルビトールおよびエリスリトールから選択される１つまたは複数のポリオールを含む。
速溶性錠剤の場合、スピルリナは、典型的には、０．１～１０mgの範囲の量で存在し、１３５～１６５の強度指数を特徴とする。
本発明に係る菓子製品は、Richard W. Hartel et al., Confectionery Science and Technology (Springer International Publishing G-, Switzerland) chapter 7 - Compressed Tablets and Lozenges pp 189-210に報告されている方法などの従来法によって得ることができる。例えば、速溶性錠剤は、ポリオール、香味料、甘味料、滑剤および他の従来の賦形剤からなる粉末の直接圧縮によって得ることができる。
初めて食品に適用することによって、光ホワイトニング効果を定量して特定の処方の有益な効果を検証可能な方法が見いだされた。
スピルリナの強度。また、一部の色素が、舌をほとんど着色することなく即時の光ホワイトニング効果を有することも見いだされた。
「光ホワイトニング」は、歯の色が全体的により白く認識されるようにする、最少量の色素の歯への沈着のことを意味する。
ＷＩＯとして知られている指数が歯の白色度を評価するために策定されている。前記指数は、Luo et al., Development of a whiteness index for dentistry. Journal of dentistry 37s (2009) e21-e26によって公表された方程式に従って計算される。本発明による適用の前後に比色パラメーターを測定することによって、ΔＷＩＯを計算することができる。ΔＷＩＯが高いほど、光ホワイトニングの効果は大きい。
「即時の」は、本発明に係る製品を数分間摂取した後に、例えば、菓子１個を２．５分間、５分間または１０分間咀嚼または摂取した後に、効果が記録されることを意味する。前記時間は、光タイプ以外のホワイトニング歯磨剤の効果の検証に一般的に用いられる時間（典型的には６週間に達する）よりもはるかに短い（ADA - Tooth Stain Removal Products - January 2019）。
本発明に係る菓子製品は、ＵＳ２００６／０１０４９２２に記載されている処方のものよりも強く迅速なホワイトニング効果を有するという利点がある。さらに、本発明に係る菓子製品は、消費者の舌への望ましくない着色を引き起こさない。インディゴティンまたはＥ１３２色素の使用は、最終製品に、包装製品が光に曝されることによって引き起こされる退色に対して特定の安定性を与える。実際、菓子製品は、大抵の場合、消費者が内部の製品を見ることを可能にする包装透明部からなる「窓」を特徴とした包装で、社会に提供される。
前記透明窓は、製品を見ることを可能にし、消費者にとってより魅力的である一方、他方で、これらの透明窓は、製品を光に曝し、そして、そのような光曝露は、製品の色の分解を引き起こし、色素の退色をもたらし得る。このことは、包装内の製品の色が、特に不均一に、薄くなる可能性があるので、透明窓を使用することにより意図されるものとは正反対の効果を生じることになり、製品を魅力のないものにし、古い、擦り切れた製品または不良品との印象さえ与え得る。このことは、製品を見た後の消費者の購入判断の可能性に直接影響を及ぼすだろう。
色落ちはまた、光ホワイトニング効果の効き目も低減させるだろう。
上に挙げた有利な効果は、後述する試験で実証される。
実施例１－色素が製品のコーティング中に配置されるかコア中に配置されるかという点だけが異なるチューインガム処方の比較

上述の通り処方したチューインガムのコアまたはコーティングに、下の表１に列記する色素を指定の量で加えた。
被験者に対するホワイトニング効果は、VitaEasyshade Advance 4.0装置で測定した。試験に参加した６名の被験者は、実施例３、４、５、８および９の場合はチューインガム１個を５分間、実施例６および７の場合はチューインガム２個を１０分間咀嚼した。
各測定を、前歯に対して３通りで行い、ＣＩＥＬＡＢシステムに従って比色パラメーターを得て、その後、これらを、Luo et al. “Development of a whiteness index for dentistry”, Journal of Dentistry 37s (2009) e21-e26によって公表された方程式に従って組み合わせ、咀嚼前後の平均白色度（ＷＩＯ）およびその変動ΔＷＩＯを決定した。
結果を下の表２に示す。
実施例２－速溶性錠剤のホワイトニング効果
以下の組成を有する、５分未満の完全溶解時間を特徴とする錠剤を評価した：

実施例１で報告したように測定された３．６５に達するΔＷＩＯ指数は、色素がコーティング中に配置されたチューインガムを摂取することによって得られたＷＩＯ指数と同等であり、色素がコアにだけ挿入されたチューインガムに関して測定されたＷＩＯ指数よりもかなり高い。
実施例３－舌の着色評価
舌の着色は、下に列記するような様々な製品サンプルを被験者に咀嚼させる試験を用いて評価した：

スピルリナを含有するチューインガムのサンプルは、下に示す通り作製した：
サンプルを様々な時間間隔で咀嚼し、各咀嚼間隔の終わりに被験者の舌を撮影し、その写真を比較して、評価担当者が以下の基準で舌の着色レベルを計算した：
０＝着色なし
１＝舌の一部、特にその端部または中央にのみわずかな着色
２＝舌の１／３～２／３のわずかな着色
３＝舌の一部、特にその端部または中央にのみ明らかな着色
４＝舌の１／３～２／３の明らかな着色

糖衣菓を１５秒間咀嚼して続いて５分間休止することを特徴とするサイクルで、指定の時間間隔で咀嚼した試験サンプルに関する結果を下の表３に示す。時間間隔は以下である：

実施例４－光に対する安定性
光曝露によって引き起こされる退色に対する安定性は、３ヶ月間、６ヶ月間、９ヶ月間および１２ヶ月間の日光への曝露をシミュレーションするAtlas製のSuntestXLS+装置で評価した。

試験に使用したサンプルは以下の通りである：
ＣＩＥＬＡＢ比色モデルに従って測定を行った。この場合、色は、３つの値「Ｌ」（明るさ）と「ａ」と「ｂ」によって表示され、２つの色範囲は、それぞれ緑色～赤色と青色～黄色の範囲であり、値は－１２０～＋１２０である。
サンプルの色の変化は、パラメーターΔＥを測定することによって計算した。結果を下の表５に示し、この表は、Ｅ１３２を含有する実施例が、Ｅ１３１およびＥ１３３を含有する実施例と比較して最小限の色変化しか示さないことを実証している：
Claims (11)
- Ｅ１３１、Ｅ１３２、Ｅ１３３およびスピルリナから選択される少なくとも１つの青色色素を含有する速溶性マトリックスを含むかまたはそれからなる、チューインガム、錠剤、飴またはフォンダンの形態の菓子製品。
- 色素がスピルリナである、請求項１に記載の菓子製品。
- 色素がＥ１３２である、請求項１に記載の菓子製品。
- マトリックスが、Ｅ１３２、Ｅ１３１もしくはＥ１３３色素を０．１５～０．８５mgの範囲の量で、または１４００±１４０の強度指数を有するスピルリナ色素を０．１～１００mgの範囲の量で含有する飴コーティングである、チューインガムの形態の請求項１に記載の菓子製品。
- 飴コーティングが、キシリトール、イソマルト、マルチトール、ソルビトールおよびエリスリトールから選択される１つまたは複数のポリオールを含む、請求項４に記載の菓子製品。
- 速溶性錠剤の形態のマトリックスからなる、請求項１、２または３に記載の菓子製品。
