Abstract
Description
本出願は、発明の名称が「SHORTENING WITH CRYSTALLINE FAT」である2019年3月28日に出願された仮特許出願第62/825,135号の利益を主張し、その全体が参照により本明細書に援用されている。
本発明は、結晶性脂肪及びその製造方法に関する。
この実施例の目的は、結晶性脂肪を油と混合することによるショートニングの生産をシミュレートすることである。
結晶性脂肪の10個の試料を調製する:
-S1~S3:それぞれ80、150及び250バールの圧力におけるパームスーパーステアリン。
-S4~S6:それぞれ80、150及び250バールの圧力におけるパームステアリン。
-S7~S9:それぞれ80、150及び250バールの圧力における、パームステアリン(70%)混合ダイズ油(30%)。
-S10:250バールで、冷却温度を下げた、パームステアリン(70%)混合ダイズ油(30%)。
実施例2:クッキー及び積層ビスケットにおける応用試験
Claims (19)
- 室温で約0.04g/mL~約0.40g/mLの範囲の粉末密度を有し、粒子の少なくとも50%は、直径3~60μmの範囲の粒子サイズを有する、結晶性脂肪。
- 室温で約0.05g/mL~約0.30g/mLの範囲の粉末密度を有する、請求項1に記載の脂肪。
- 室温で0.10g/mL~約0.25g/mLの範囲の粉末密度を有する、請求項1に記載の脂肪。
- 油保持能力は、前記脂肪の重量の約5%~約80%の範囲である、請求項1に記載の脂肪。
- 請求項1~4のいずれか一項に記載の脂肪を含む、ショートニング。
- ショートニングであって、
室温で約0.04g/mL~約0.40g/mLの範囲の粉末密度を有し、粒子の少なくとも50%は、直径3~60μmの範囲の粒子サイズを有する、結晶性脂肪と、
液体油と、を含み、
前記結晶性脂肪は、約25重量%~約99.9重量%の範囲であり、前記液体油は、約0.1重量%~約75重量%の範囲である、ショートニング。 - 前記脂肪が粉末状である、請求項6に記載のショートニング。
- 0.05g/mL~約0.30g/mLの範囲の粉末密度を有する、請求項6に記載のショートニング。
- 室温で0.10g/mL~約0.25g/mLの範囲の粉末密度を有する、請求項6に記載のショートニング。
- 油保持能力は、前記脂肪の重量の約5%~約80%の範囲である、請求項6に記載のショートニング。
- 前記粉末状の脂肪に乳化剤が添加されていない、請求項6に記載のショートニング。
- 前記脂肪は、パーム油、パームステアリン、シア、パーム核油、ヤシ油、マンゴー核油、イリッペ、ババス油、ペキ油、ボルネオ脂、Allanblackia油、カカオバター、ナッツ油、動物性脂肪、乳脂肪、ヒマワリ油、トウモロコシ油、ダイズ油、キャノーラ油、ナタネ油、綿実油、米ぬか油、ベニバナ油、アマニ油、ラッカセイ油、オリーブ油、トール油、並びにその画分及びその高オレイン品、並びにこれらの組み合わせからなる群から由来する、請求項6に記載のショートニング。
- 前記脂肪は、完全水素添加、若しくは部分水素添加した、かつ/又は、エステル交換した油に由来する、請求項6に記載のショートニング。
- 前記液体油は、ダイズ油、ヒマワリ油、ナタネ油、キャノーラ油、パームオレイン、パームスーパーオレイン、トウモロコシ油、綿実油、米ぬか油、ベニバナ油、アマニ油、ラッカセイ油、オリーブ油、トール油、及びその高オレイン品からなる群から選択される、請求項6に記載のショートニング。
- 前記液体油に、プロピレングリコールエステル、ポリグリセロールエステル、レシチン、モノグリセリド、ポリソルベート若しくはモノグリセリドの乳酸エステル、又はこれらの組み合わせである乳化剤を、最大で5%添加し得る、請求項6に記載のショートニング。
- 前記液体油は、パーム油ではない、請求項6に記載のショートニング。
- 前記ショートニングは、高オレイン液体油を含む高オレインショートニングである、請求項6に記載のショートニング。
- 請求項6に記載のショートニングを含む、焼成品、菓子、フィリング、生地製品、ビスケットフィリング、チョコレートスプレッド、ナッツバター、電子レンジ用ポップコーン、肉代替物、又は乳若しくは乳脂肪代替物。
- 焼成品、菓子、フィリング、生地製品、ビスケットフィリング、チョコレートスプレッド、ナッツバター、電子レンジ用ポップコーン、肉代替物、又は乳若しくは乳脂肪代替物のための、請求項6に記載のショートニングの使用。
