Abstract
Description
<発酵ビールテイスト飲料の調製>
紅茶(紅茶の茶葉)及びみかん(果皮及び果肉を含むみかんの乾燥粉末)を原料として使用して、麦芽比率 約99%の発酵ビールテイスト飲料を以下の方法により調製した。まず、大麦麦芽と、水とを混合した後、常法により糖化して、麦汁(糖化液)を得た(糖化工程)。麦汁をろ過した後(麦汁ろ過工程)、麦汁を昇温して煮沸させた(煮沸工程)。煮沸工程において、紅茶及びみかんを、煮沸させた状態の麦汁に添加した。煮沸工程後の麦汁(熱麦汁)に対し、沈殿による不溶物の除去(静置工程)、冷却(冷却工程)等を行って、冷麦汁(発酵前液)を得た。次いで、冷麦汁に、酵母(ビール酵母)を添加して発酵させ、発酵後液を得た(発酵工程)。貯酒して、発酵後液を熟成させた。貯酒後の液(貯酒液)をろ過して、実施例1の発酵ビールテイスト飲料を得た。得られたビールテイスト飲料は、アルコール濃度が5.8v/v%であり、苦味価(BU)が定量限界未満であった。原麦汁エキス(主バイ)濃度は、約13.0g/100cm3となるように調整した。
実施例1−1の発酵ビールテイスト飲料の抗微生物増殖効果は、発酵ビールテイスト飲料に菌体としてSporolactobacillus terraeを接種させ、目視で菌体の増殖性を評価することにより行った。結果を表1に示す。なお、抗微生物増殖効果は、菌体を添加していない発酵ビールテイスト飲料と比較して目視で菌体の沈殿が認められたものをA、菌体を添加していない発酵ビールテイスト飲料と比較して目視で菌体の沈殿が認められなかったものをBとした。
実施例1−1の発酵ビールテイスト飲料の官能評価は、選抜された識別能力のあるパネル4名により、「平板さ」、「渋味」及び「華やかな香り」を評価することにより行った。結果を表1に示す。なお、官能評価は、いずれの評価項目も評点1〜5の5段階で評価し、その平均値を評価スコアとした。
実施例1−1の発酵ビールテイスト飲料に対し、表1に示すアルコール度数となるように、原料用アルコールを添加し、実施例2−1の発酵ビールテイスト飲料を調製した。
実施例1−1の発酵ビールテイスト飲料に対し、表1に示すpHとなるように、水酸化ナトリウムを添加し、比較例1の発酵ビールテイスト飲料を調製した。
実施例1−1の発酵ビールテイスト飲料に対し、表2に示すpHとなるように、リン酸を添加し、実施例1−2〜1−4の発酵ビールテイスト飲料を調製した。
実施例1−1の発酵ビールテイスト飲料に対し、表2に示すアルコール度数となるように、原料用アルコールを添加し、実施例2−2〜2−4の発酵ビールテイスト飲料を調製した。
Claims (5)
- pHが4.2以下であり、苦味価が5未満である、発酵ビールテイスト飲料。
- pHが3.6以上である、請求項1に記載の発酵ビールテイスト飲料。
- アルコール度数が5v/v%以上である、請求項1又は2に記載の発酵ビールテイスト飲料。
- 原料としてホップを含まない、請求項1〜3のいずれか一項に記載の発酵ビールテイスト飲料。
- 原料中の麦芽の比率が50重量%以上である、請求項1〜4のいずれか一項に記載の発酵ビールテイスト飲料。
